Preparation and cooking times
Ready in 10 minutes plus chilling
- Wash the limes, then dice and put in a punch bowl. Add the demerara sugar, chopped coriander, then muddle, making sure all the juice from the limes is pressed out and the mix well blended.
- Pour in the elderflower cordial and Sailor Jerry rum and chill. Just before serving, add plenty of crushed ice (2 or more times the volume of the mixture, depending on desired strength) and stir well.

- handful coriander , leaves chopped (the stalks can go in, too, if they're finely chopped)
- 100ml elderflower cordial
- 350ml Sailor Jerry rum (or any spiced sum, such as Captain Morgan)
