Leek & Parmesan risotto

Method

  1. Bring the stock to a simmer. Heat a large wide pan and add half the butter and the olive oil. Add the spring onions, leeks and garlic and cook for 5 minutes until softened. Add the rice and stir to coat then tip in the wine and bubble until reduced. Add the stock a little at a time, stirring until the rice is tender with a little bite and oozy.
  2. Stir in the Parmesan and the rest of butter and season.

    Made this recipe for the first time last night (my first ever attempt at risotto) and it was superb! I substituted the wine for a little more chicken stock, but it was still absolutely delicious. I will definitely be making this one again.

    Very nice indeed, a real pleaser. I cooked the leeks etc for longer than suggested as I felt they took longer to soften. Also used double the amount of cheese, and was just right.

    I am surprised on the amount of good praise for this recipe. I found it to be bland and lacklustre. I have cooked a number of risotto's before (meat and vegetable) which have been very tasty - this falls well short.

    I added lots of fresh thyme at the first stage. Cheap, tasty, easy and comforting. One of my favourite risotto's to date.

    I'm really at a loss as to why this is so popular?! I found the leeks made the risotto really slimy. Not for me I'm afraid and possibly my least favourite recipe I've tried on this site.

    Made this last week and it was gorgeous!!:-) Didn't use the White wine though as I didn't have any but it was still delicious!! I improvised with a dollop of marscapone at the end of cooking which made for a very creamy risotto...beautiful!!:-)
