Japanese mirin-poached beef

Method

  1. Put the meat in the freezer while you prepare the other ingredients (this will help when slicing). Combine the stock, soy, mirin and sugar in a pan, bring to a boil, then turn down to a simmer. Add the onion and cook for 5 minutes.
  2. Meanwhile, slice the meat as thinly as you can. add the beef to the pan and cook for a few more minutes, stirring, until opaque. Sprinkle with pickled ginger, spring onions and chilli, and serve with steamed rice and some of the cooking liquid spooned over.

    Absolutely amazing, i do not use that word lightly or often...I added some peppers at the vegetable, stage as suggested previously and some pickled gherkins. Thank you Olive magazine and Japan!

    This was great tasting, quick and easy. Didnt have pickled ginger (where would I get this from?) so just added regular ginger in the cooking process along with chillis as well as I did not have fresh. Will definately make again.

    I made this with coconut rice (jasmine rice + coconut milk) and it was AMAZING. I agree with the others on here though, I added more ingredients to the beef - some peppers and pak choi.

    This is a gorgeous, quick , healthy meal. My fussy husband absolutely loves this, as do I. I do add a pepper to bump up the veg content but it certainly doesnt need tweaking at all!

    Delicious served with jasmine rice! I couldn't find pickled ginger so used regular ginger, added at the same time as the beef. I can imagine it would be even better with the "proper" ingredients, but it was fabulous anyway. Next time I plan on changing spring onions for sugar snap peas or something else green - though it didn't harm the dish, it didn't actually need any extra onion on top... just something green to brighten it up! Either way, this will be made again!

  • 250g piece rump steak , trimmed of all fat
  • 150ml vegetable stock
  • 3 tbsp soy sauce
  • 5 tbsp mirin
  • 1 tbsp golden caster sugar
