Sticky chocolate pudding with marshmallows

This chocolate and marshmallow feast is an Australian favourite - and it's easy to see why. It even makes its own sauce!

Method

  1. Butter a large baking dish (about 2-3 litres in size). Sift the flour, ½ tsp salt, caster sugar, baking powder and 6 tbsp cocoa powder into a bowl. In a separate bowl, combine the milk, melted butter, eggs and vanilla. Mix the dry and wet ingredients together, then pour into the baking dish. This can be covered with cling film and chilled for up to 24 hrs.
  2. Heat oven to 180C/160C fan/gas 4 and boil the kettle. Take the pudding out of the fridge and uncover, if necessary. Sprinkle the muscovado sugar and cocoa evenly over the pudding, then pour 700ml boiling water over the top.
  3. Bake for 35-45 mins until the pudding is puffy and firm in the centre. Scatter over the marshmallows and return to the oven for 30-second intervals until they are just melting. Serve straight away - it will be hot - with cream or ice cream

    Brilliant Recipe - did as recipe said first time and 2nd. Then the following 2 times made a normal sponge with added Orange for a tangy tast then put over the top boiling water with some sugar (small amount) and about 2 tbsp grapefruit Marmalade. Took about an hour to cook and then was sat in grapefruit curd type syrup. Really tasty will be adapting and making more.

    Love this recipe!!!!!!. Just made it for my 12 and 15 year old girls joint birthday party and it went down a treat. Got the kids to help out ant they were amazed at the water poured onto the mixture and to see such a fab treat come out of the over 40 min later!!!!!!!! Fool proof!

    Fantastically rich pudding. Great for a girls night in with loads of vanilla ice cream. I didn't add the marshmellows as it was rich enough. Would make again, but halve the quantity for 8 people.

    I made this when friends came round - it was amazing! Totally hit the spot. I didn't use marshmallows - thought that would make it too sickly. It was so good I had 2 helpings!

    Brilliant. Made for 4 and didn't notice it said for 10 so I had ton left. Will half recipe in future and will defo do it again but don't need the marshmallows.

    Excellent - was sceptical about the hot water but worked very well. Big hit at bonfire party. Non pudding eating husband caught scraping the dish the morning after says it all!

    Fabulous pud for bonfire night,really good,I wd make again but don't think it needs marshmallows.I made in morning and baked about 5 hrs later,gorgeous!I'm usually sceptical about how many recipes feed but this did 10 adults no probs.definately try this for an easy make ahead pud.

    SO. GOOD. actually amazing :D only thing I did differently was put 300g of sugar on top... and 5 tbsp of cocoa powder, then covered it in marshmallows!!

    i cooked it for my mum for her birthday, i followed the recipe, and cooked it. Thought it was wierd adding water but did it anyway. it turned out horrible it just tasted like water and looked like a dirty pond, so i cooked it more which didn't help at all. it ended up in the bin, i don't know what went wrong! :(

    I wasn't exactly impressed with this dessert. I thought it was okay, but nobody else liked it really. We didn't use as much sugar to sprinkle on top though because 71g sugar per serving seemed insane to us, so maybe this affected the dish. I found it a bit bland and nothing special though. The marshmallows took so long to melt that we just took them off in the end!

    Made this for dessert on New Year's Day and it was loved by everyone. I was working from the magazine and did check online that the amount of sugar to go on top was correct as it seemed such a huge amount - but followed the recipe and it was gorgeous. I love the fact that you can make it up to the end of step 1 & refrigerate then bake it whilst you're eating main course. Guests have asked for the recipe!

    Fab pudding.really easy to make.was a bit worried about the boiling water over the top and the amount of sugar and re checked online + read the other comments just before guests were about to arrive.no need to worry though turned out great.Took about 50 mins to cook.wouldn't bother with the marshmallows next time, dont think they added anything extra.left overs great zapped in the microwave.definitely make again.
