Rarebit baked potatoes

Speed up your supper by microwaving the potatoes first, then finish off with 15 minutes in the oven for that comforting crispy skin

Method

  1. Heat oven to 200C/fan 180C/gas 6. Prick the potatoes all over with a fork then rub with oil. Bake until tender, approx 1 hour.
  2. Halve the potatoes and scoop out the flesh leaving a 1/2 cm layer. Mash with 2 large knobs of butter and the milk then season. Mix in the egg, then 3/4 of the cheese, mustard and a few good dashes of worcestershire sauce. Pile the mix back in the shells then sprinkle over the rest of the cheese and put back in the oven for 15-20 minutes until golden. Serve with salad leaves.

    Just wonderfull,did not have cedar cheese so I used gruyere swiss cheese,served it with a green salad and sliced smoked wild salmon,great easy meal!

    I like how everyone these day's assumes that every body owns a microwave! We have not had one for years, and it's quite annoying that people take it for granted that every body owns one.

    Knikitta, the receipe does not tell you to use or assume you have a microwave. It simply suggests that if you do have one, then you can reduce the approxiamte cooking time down from 1 hour 20 mins which I think is a more than resonable and helpful suggestion!

    I had a small piece of Chorizo which I diced and fried off. Added it to the other ingredients and wowee the baked potatoes were really yummy.

    Nice enough, but not as good as my Mum's cheesey jacket potatoes! I do like the idea of adding chorizo though!
