  1. Heat oven to 200C/180C fan/gas 6. Pile the spinach into a large pan over a medium heat, turning it over and over until wilted. Remove from the heat and drain off the excess liquid.

  2. Mix spinach with the soft cheese, then place in the bottom of a small baking dish and sit haddock pieces on top. Lay sliced tomatoes on top of the fish and sprinkle with the Parmesan. Bake for 15-20 mins (depending on thickness of the haddock), or until the fish flakes easily.

Great dish! I modified slightly by adding a bit of Dijon mustard to the cream cheese and also using some cheddar cheese. I also used a tin of chopped tomatoes on top instead of sliced tomatoes. I made sure to use smoked haddock as it gives a bigger flavour impact.

Super easy, fast recipe. Tasted great with little effort, I served with sweet potato fries which worked really well. For me the fish can take a little longer but overall a great recipe!

This is one of my fish-staples. All ingredients go well together and make a satisfying dish. I must admit I swap the Parmesan with a small amount of cheddar; but that's it!

An incredibly simple dish but a perfect mid week meal. Very easy to prepare and very tasty. served it with roasted new potatoes and a green medley of broad beans, petit pois and samphire.

Thought it sounded a bit bland so jazzed it up a bit. Fried off some onions, mushrooms and sliced red pepper. Added garlic and mixed herbs then melted in the cream cheese and the wilted spinach. Spooned into a baking dish then topped with fish, tomatoes and Parmesan as per recipe before baking for 20 minutes. Turned out to be my favourite fish dish ever!

Feels both healthy and rich at the same time. And I always love meals where there's veg cooked with the meat or fish, so this is a bit of a winner. I served with mash.

This is a super delicious, filling and easy recipe. I added a little salt and pepper to the soft cheese to enhance the flavor and grated some mild chedder on top as I didn't have any Parmesan (still tasted lovely!) I also grilled it for a few minutes at the end to make it a little crisp. Served with herby new potatoes. Yummy!

really enjoyed this. used cod, frozen spinach and philadelphia low fat with chives as it was what i had to hand. turned out great! served it with mustard mash. yum!

Made this one twice, wasnt blown away with the taste and though it was qyite bland. Dont think I will do it again

Health, easy and quick and tastes really nice.

The extra fluid is from the cream cheese I think, mixed it with mash and tasted even better.

Will make again.

This is a very quick, easy recipe and we loved it. Used mascarpone cheese which worked really well with the spinach.
We have had it twice now in as many weeks and was good both times. I think this will be a favourite in our house.

Fish was cooked lovely, he spinach was a little rich for me but the other half loved it. I think next time I'l leave out the soft cheese. Still very nice and simple recipe.

Could I do this using frozen cod?

Yes, cod will be absolutely fine to use in this recipe. If you're cooking the fillets from frozen add approx 8-10 mins to the cooking time.
