Haddock & spinach cheese melt

A low-fat, hearty fish supper that uses just five ingredients. Try serving with creamy mashed potatoes

Method

  1. Heat oven to 200C/180C fan/gas 6. Pile the spinach into a large pan over a medium heat, turning it over and over until wilted. Remove from the heat and drain off the excess liquid.
  2. Mix spinach with the soft cheese, then place in the bottom of a small baking dish and sit haddock pieces on top. Lay sliced tomatoes on top of the fish and sprinkle with the Parmesan. Bake for 15-20 mins (depending on thickness of the haddock), or until the fish flakes easily.

    Wonderful and simple recipe! I didn't bother with spinach and soft cheese as I like my veggie to have a cleaner taste so replaced that with a fresh salad with red wine vinegar instead. Generous on the parmesan on top of the tomatoes and turn on the grill half way to brown the cheese somewhat. I served it with mashed potato and pumpkin according to the recipe of mashed potato in the"goes well with" and it was tasty. My husband who always prefers meat to fish cleaned the plate.

    Liked this dish - healthy, tasty and easy! I served it with jacket spud and peas! I used more cream cheese than the recipe said. I did find the fish released a lot of juice when cooking, so the sauce seemed a bit watery and needed thickening with more cheese!

    Fish was cooked lovely, he spinach was a little rich for me but the other half loved it. I think next time I'l leave out the soft cheese. Still very nice and simple recipe.

    This is a very quick, easy recipe and we loved it. Used mascarpone cheese which worked really well with the spinach. We have had it twice now in as many weeks and was good both times. I think this will be a favourite in our house.
