Coffee Cake

This delicious coffee cake is great for all occasions and tastes AMAZING! It is simple and easy to make!

Method

  1. Preheat the oven at 160C, 325 F,gas 3.Baseline and grease two equally sized sandwich tins. Add the sugar and the butter to a bowl and whisk until very fluffy and a pale cream.
  2. Wisk the eggs in a mug with a fork and then add them gradually to the mixture with 1 tbsp of flour each time. Make sure you don't use all the flour.
  3. Add the rest of the flour and the baking powder to the mixture and fold it in gently.
  4. Dissolve the coffee in the boiling water and add to the mixture still folding. Divide into the sandwich tins and cook for 30 minutes
  5. Meanwhile Cream the butter and the icing sugar until light and fluffy. Dissolve the coffee in boiling water, making sure you don't add too much water or the icing will be runny and add it to the butter and icing sugar. Whisk and leave in the fridge until the cake is done.
  6. Once the cakes are done and have been put onto plates spread the icing on the bottom of one of the cakes (leaving around half of the icing for the top) and spread the strawberry jam ont the bottom of the other. Spread the remainig icing ontop of the cake. decorate with cherries or walnuts. ENJOY!

    Made this at christmas and everyone who had a slice enjoyed it - including my 2 year old nephew. Coffee and children don't seem to mix!? Very nice cake indeed.

    I've tried this cake many times though it was from a different recipe book it was the same thing. It tdid have a different icing though and i have tried both of them the glaze and the icing it tastes extremely good. Here are the recipes. Coffee Icing Ingredients 1. 125g/5oz of Butter 2. 275g/10oz Icing Sugar 3. 3 5ml teaspoons of Coffee dissolved in 3 15ml tablespoons of hot water. Method 1. Beat the Butter and Icing Sugar well until creamy. 2. Add the Coffee gradually. 3. Apply on the Cake when cold. Coffee Glaze (alternative to Icing) Ingredients 1. 56g/2oz of Icing Sugar 2. 2 15ml tablespoons of Coffee mixed with 2 15ml tablespoons of hot water and 2 15ml table spoons of milk Method 1. Mix ingredients together in a bowl. 2. Spread on Cake when cool.

    Made this last week, but in one cake tin instead of two. As a result, only used half the amount of ingredients for the icing, because I pasted the icing on top of the the cake. Also omitted the jam. Loved it, as did everyone else who ate the cake :)

    Was very quick and easy to make. 30 minutes would have been too long though. Mine was ready after about 22 minutes. I must admit I didn't do the jam thing. Could have done with little bit more buttercream. Tastes very nice. I put walnuts on the top of the cake.

    I am new to baking and made this cake yesterday. I added an extra tbsp coffee to the cake mixture, omitted the jam and sprinkled walnut pieces on top of the icing. After my boyfriend tasted his piece he said "you and me are gonna go far". Result!

    I made this cake as a gift for a friend. Very easy to make, and my friend said it was absolutely delicious! The same quantities also make 24 little cupcakes: I put the buttercream on top, and finished them off with a walnut. Thanks for a great recipe!

    What a brilliant recipe and the cake is so light. However, just a hint to make sure you grease your tins well as mine was half stuck in...but its still turned out to be very lovely even if the presentation was lacking!!!
