Mixed-bean chilli with wedges

Method

  1. Heat oven to 220C/200C fan/gas 7. Toss the potato wedges in 2 tsp oil and spread out in a single layer on a large baking tray. Cook for 30-35 mins, turning halfway, until tender and golden brown.
  2. Meanwhile, for the chilli, put the remaining oil into a casserole dish and fry the onion and pepper for 5 mins. Add Cajun spice, pulses, tomatoes and stock. Cover and simmer for 15-20 mins. Remove casserole from the heat and stir in the chocolate until melted. Ladle the chilli into bowls, top each with 1 tbsp soured cream and serve with the wedges.

    Such a delicious dish, it's very juicy and tasty, and i'm not normally a vegetable fan. I left out the chocolate and onions, and frying some finely chopped bacon along with the pepper at the start gives this an extra yummy flavour.

    A fantastic recipe that I have made over and over again, in fact I usually make a huge pot and the left overs taste even better the next day in taco's or jacket potato's. I tend to use Jalepeno's from a jar and some paprika. Healthy, filling, cheap and tastes fantastic - what more can you want!

    Make a very similar chilli when there's lots of bits to use up in the cupboard, normally use nutella, which works out great but will try dark chocolate next time as recommended, should be good =) also works great in a tortilla wrap

    For someone who doesn't like beans, I really loved this. I cooked it pretty much straight- just added a crushed clove of garlic with the onions/peppers and used more of a passata type tomato sauce because that's all we had. Perhaps because of this, I found it quite wartery. I drained some of the liquid off after simmering. Only other thing was that both this and the wedges cooked much quicker than anticipated- wedges were done in 15 minutes. I think I may have cut them too thin. Either way, I adored this recipe. Definitely reccomend!

    I'd always been against using pre-made spice mixes -- they're more expensive and can be slightly 'stale'. But it REALLY works in this dish, much more convincing a chilli than if I'd attempted to mash up my own "Cajun" seasoning, as I usually do! I'd maybe add more vegetables in future, as well as lots of pulses, since these had a lovely texture and really absorbed the flavours -- a great use for tinned beans/pulses, which sometimes aren't so good when they're cooked for a while (but SO much easier than the dried ones). Truly lovely :-)

    What is: "2 x 410g/14oz cans mixed pulses in water, rinsed and drained"? This recipe sounds & looks intriuging, but not sure what this particular ingredient is referring to?

    Ladyjayne - this just means two cans of mixed beans or lentils in water (instead of tomato sauce or some other liquid) and the 410g or 14oz refers to their weight in the can in metric and imperial measures. I hope this helps.

    Chilli only: this is a fantastic dish with genuinely unusual flavours. The chocolate added a wonderful richness and slight sweetness. Couldn't be doing with a cajun mix so knocked together one from constituent spices I had in the cupboard (paprika, cayenne and black pepper, dried thyme and marjoram, chilli flakes, and plenty of fresh garlic). I'll definitely make this again and will use the same spice mix. I'm keen to see if it's just as good with beef mince.

    Made this following chili con carne step by step recipe (w/out meat) longer cooking so better flavours, used pasatta, kidney beans & chickpeas. Used a spice mix of oregano, thyme, cumin, coriander, chili powder, smoked paprika, cinnamon stick & bay leaf. Also chucked in an ancho chili. Tasted great, the dark choc is a wonderful addition. Also served with line wedges and Greek yogurt. I suppose I didn't really follow the recipe at all! By the way all the comments about peeps husbands turning their nose up at meat etc are hilarious being a single male chef! Incultured bunch.

    Chilli was great! Was unsure as it lacked a lot of the spices I'd usually use but it really turned out fantastic! The wedges too were delicious though I cut mine quite thin, salted them and added about a tbsp of paprika over the top to give them a lil flavor. Definitely gonna make it again!

    I cooked this for a vegetarian friend and really enjoyed it! It was a nice change to meat chilli. I also enjoyed the addition of sour cream. Great dish, and good value for money too, so perfect for a student.

    Amazing!! We used chilli spice mix, and extra cajun, cumin powder, cumin seeds, paprika and chilli flakes. Also added garlic, coriander, mushrooms and used black eye peas and chick peas, along with mixed beans, and made loads to pop in freezer for week. Had it with rice, crusty bread, in wraps with salad and wedges, all with grated cheese (obviously not all at once tho'!). Definitely a favourite.

    Love this recipe. Meat chilli can often be a bit heavy and this makes a wonderful change- the chocolate really transforms it! I made the wedges with oil-spray rather than oil to make them a little healthier and sprinkled a little of the cajun spice on them just for a bit of extra flavour.     Lovely! The wedges were delicious. I added 3 cloves of garlic, a dash of cayenne pepper and one chopped red chilli to give it more of a kick and it went down a treat.
