Ingredients

  • 8 skinless, boneless chicken thighs
  • zest and juice 2 limes, plus extra wedges to serve

  • 2 tsp medium curry powder or garam masala
  • 1 tsp chilli powder (optional)
  • 50g desiccated coconut
  • 1 tbsp vegetable oil
  • mango chutney and rice, to serve

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the chicken in a large bowl with the lime zest and juice, curry powder, chilli powder, if using, and seasoning. Mix well, then toss in the coconut. Place chicken on a rack sitting in a roasting tin, drizzle with the oil, then bake for 25 mins until cooked through and tender. Serve with mango chutney, lime wedges for squeezing over and rice, if you like.

An acquired taste. It was too dry to have with rice but was much nicer the next day served cold with salad.

We all found this very dry even with the mango chutney. I won't be making it again.

Made it with chicken breasts for my Son and he loves it and I love it because its so quick and easy to prepare.

Another delicious and easy recipe from BBC Good Food! Used mild chilli powder, but will use mild curry powder too next time as it was a bit spicy for my youngest. As other people have said the mango chutney really compliments the flavours of the chicken - don't try without it!

Very tasty, juicy chicken - works with breasts just as well. I just mixed the coconut into the marinade and rubbed it all over the chicken. That made the coconut stick quite well and covered all the chicken (also meant all the yummy marinade made it into the dish!). Would definitely make this again!
