Coconut-crusted lime chicken

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the chicken in a large bowl with the lime zest and juice, curry powder, chilli powder, if using, and seasoning. Mix well, then toss in the coconut. Place chicken on a rack sitting in a roasting tin, drizzle with the oil, then bake for 25 mins until cooked through and tender. Serve with mango chutney, lime wedges for squeezing over and rice, if you like.

    Really quick and easy to make. Literally took 5 mins to mix it all together and get it in the oven. Loads of flavour. Didn't have any chutney but served with brown rice and veg. Will make again for a no-effort midweek meal.

    Absolutely delicious! I followed the recipe to the letter. I did turn them half way through to brown on both sides. Served as a starter with mango chutney when I had girlfriends over for a thai themed dinner party. They went down a treat!

    Very tasty. We cooked this as a main course, served with rice, rotis, yoghurt and mango chutney. You really get the flavour of the lime coming through. We did bake 10 minutes longer, as it wasn't cooked through in the suggested 25 minutes.

    Simple, quick and tasty. Don't think I'll bother with the chilli powder next time - probably use finely chopped birdseye chilli instead. I mixed mango chutney with soured cream for a delicious dip / sauce.
