Cinnamon rubbed salmon with couscous & harissa yogurt

A superhealthy fish supper that's on the table in under half an hour

Method

  1. Heat the grill. Put the couscous, sultanas, most of the coriander, 1 tsp cinnamon and some seasoning in a bowl. Pour over the hot vegetable stock and set aside for 5 mins to soak.
  2. Mix together the pinch of cinnamon, honey and oil. Sit the salmon in a baking tray, spread over the honey mixture and season. Cook under a hot grill for about 8 mins until the fish is cooked through.
  3. Meanwhile, swirl together the harissa and yogurt. Fluff up the couscous with a fork and serve with the fish and yogurt, sprinkled with the remaining coriander alongside some green beans, if you like.

Making it with chicken

Swap the salmon for 2 skinless, boneless chicken breasts. Slash each breast a few times before rubbing with the honey mixture, then grill for 10-15 mins until cooked through, turning halfway through cooking.

    This worked really well and very quick to put together. I wrapped my salmon in foil and baked in a hot oven for 20 minutes instead of grilling.

    Wow, what a tasty dish and so quick and easy to make too! I've never used harissa paste before and was (pleasantly) surprised by its hotness, although my partner found it too hot (the lightweight:-)). I used a lightly smoked salmon and served up with cucumber and spring onions to cool things down a little. Absolutely lovely. I'll be cooking this one again sometime soon.

    Nice dish, very easy to make so great for midweek. I only used half the tub of yogurt which was plenty for us, added a large tsp of harissa. Will be making again

    I made this last night, but tweaked it slightly, leaving out the sultanas and honey and used the juice of half a lime with the cinnamon and olive oil for the salmon - a lovely light dish that both I and my flatmate enjoyed.

    This was lovely. I cooked it last night and left out the sultanas in the couscous as I didn't have any. It was so tasty and really different to our usual Thai or itallian salmon dishes. We will make this again. The Morroccan Carrots were perfect with it. I used less olive oil to keep it a bit healthier a plenty of oil in salmon. Delicious.

    I love this recipe - I find it's little more than 10 minutes from entering kitchen to table. Put the marinade on the salmon, put it in the oven (I baked rather than grilled), then the rest can be prepared in the 10 mins while its cooking. A delicious meal that looks like you've spent ages on it. Firmly inserted into my repertoire!

    the salmon was quite bland when i made this so it was a shame, but the yoghurt helped a bit with that (only needed a tiny bit though for 2 people) the couscous with cinnamon was a really nice change and tasted lovely; will use the cous cous again for sure!
