Red quinoa, feta & spinach salad

A colourful, easy salad packed full of goodness, and all for under 400 calories

Method

  1. Cook the quinoa according to pack instructions. Drain well then toss with 2 tbsp oil, vinegar, garlic and cumin while still warm and season.
  2. Toss through the rest of the ingredients and serve.

    it was nice - i didnt like the cucumber in it though. might put a bit of nuts in it next time.

    Having never cooked quinoa before I was really keen on trying this recipe. I folowed the instructions on the packet and basically ended up with a big sludgy mess! What a waste of quinoa! It worked second time round however and I did enjoy the recipe although, for me, the feta was too over-powering. I may try it with mozzerella or haloumi next time and I like the idea of adding cherry toms. A nice healthy recipe

    I've made this many times now as it's fantastic to take into work for lunch. I can't remember the name of the product but I've been using a quinoa and bulgar wheat mix from Tesco which is also lovely. I always add a few cherry tomatoes too!

    This is a great recipe, very easy and quick to do and tastes delicious! I didn't have cumin and replaced it by 2 table spoons of curry powder, it worked very well. Enjoy!

    I love this recipe - have also made it with bulghar wheat instead of quinoa and that's also really nice. I think the cumin should be classed as the 'secret ingredient' as it really makes the whole meal come together!

    I halved the ingredients to serve 2. I used white chardonnay wine vinegar, white quinoa, no spring onions and I peeled, deseeded and finely diced the cucumber because I don't like it much and this meal was AMAZING! I rolled the spinach up and sliced it very finely so it was really finely shredded and it just started to wilt slightly in the quinoa which was nice. I just can't believe how such simple ingredients can taste so WOW. Pefect light lunch and will definitely be making again.

    this has to be my favourite salad recipe ever! I made it about a year ago and have been making it ever since. i think the secret is in the cumin in the dressing. Also I would make sure you use crumbly feta as it becomes extra divine when you add the warm quinoa to the mix. Perfect for lunchboxes or as a side dish to some meat
