Swede mash

A simple side dish that makes the most of this unglamorous but great veg

Method

  1. Simmer the swede until tender and drain well. Tip into a food processor and whizz with a knob of butter and enough cream to make a smooth mash.
  2. Season really well and serve.

    I did have a special dinner for my sister in laws birthday and I used this as one of the vegetables. I did add a little more cream plus some garlic (from a tube) It was lovely and creamy and went down very well.
