Method

  1. Pare the zest from the oranges using a peeler, making sure that none of the bitter white pith is left on the peel. Put the zest, spices and vanilla pod in one large or several smaller clean jars, then tip in the vodka. Seal and leave for a week, shaking the jar each day.
  2. After one week, you're ready for the next stage. Boil a kettle of water. Put the sugar in a heatproof bowl, then pour over 500ml boiling water, stirring until the sugar dissolves. Add to the vodka mix, then leave for another week, shaking the jar regularly. Strain into decorative bottles, discarding the peel and spices, and store in a cool place until Christmas. Before giving, drop some fresh spices and peel into each bottle to decorate. Will keep bottled for 6 months.

I'm just about to try making this - just wanted to add that Ikea is a really great place for cheap decorative glass bottles and kilner-style jars for mking this.

I've made this for the last two years - it's always been a highly appreciated gift. I would suggest making it as early as possible. (I've missed the opportunity this year - and it's only early Nov). When it's "young" it's good - but if you hide a bottle at the back of the cupboard - steep the orange and spices for 3 months in the dark then do the syrup and then hide it in the cupoard - for a year it's EVEN better. I'm sure this would really put you off actually tackling it - but it's not a labour heavy recipe and it's so worth it. you could give as a gift and say "dont' open until next Christmas"! My lovely lyrical friend described it as "Christmas in a glass".

I set mine going yesterday and it's happily steeping away in a jar waiting for step two. It already smells and looks fantastic. Very exciting!

Made this for Christmas presents this year; really well received. I cheated with the vanilla pods as I was making in bulk and it would have been very expensive to buy loads of vanilla pods.. so I found 'vanilla bean paste' in Waitrose and added half a teaspoon to each recipe instead which seemed fine. I also reduced the sugar content by a third - was still very sweet, especially with the vanilla. I struggled to find suitable presentation bottles so initially used the 'Bottle Green' cordial bottles as suggested by someone else here, but the labels are a nightmare to remove! After the first 3 I went hunting for other screw top bottles and ended up using Fentiman's root beer/ginger beer/curiosity cola etc bottles. These are smaller (500ml) so results in more presents for people, and the labels just fall off in the sink - even better! Made my own gift labels to add to the plain bottles and they looked quite sweet.

It is a lovely after dinner drink and is a nice alternative to limoncello. Well worth trying over vanilla ice-cream as previously suggested

I made this and gave to friends and family for Christmas, changed it only by instead of decorating and using the fruit and spices mentioned, I bought from Marks and Spencer the mixed christmas bag of spices and dried fruit which included cranberry and cloves etc. Was a Great success and lovely looking presents!

Is it possible that I could just use Vanilla Extract as a substitute for the pods? Living in Canada and pods are very hard to come by and the paste is quite pricey!

BOTTLES! I made double quantity, it's nearly ready for bottling, smells lovely. Lots of questions re bottles. I bought a 5 litre bottle of water and used the bottle to make it in -the neck is wide enough to add the peel etc. and easy to do the shaking. That cost £1 from Tesco. Then went internet searching and I found bottles expensive, even in Ikea. So suggest Google Warnes of Knutford. I've just received 12 500ml "pop bottles" complete with lids and including P&P cost less than £12. They have posher bottles too, but I thought with a bit of ribbon or raffia, these will be just fine.

Am going to make this this week and just wanted to share some shopping tips. I bought my vanilla pods on ebay for a lot less than in the shops and clear glass wine bottles can be found at Roys and Wilkinsons for about £5 for 6. Hope that helps!

After reading all of the above, I've just done stage two and only added half of the sugar water (300g sugar plus 250ml water) and it tastes sweet enough for me! I suppose the only drawback is that the shelf life might be shorter, but I doubt if it will last long around my lot anyway...... Will update next week after bottling ceremony :-)

I can't find proper cinnamon. The packets here all use Cassia (though they are marked cinnamon). I know this has a stronger flavour? Will this make much of a difference? Make it too strong/bitter?

We did this for Christmas. Doubled the ingredients, used cheap vodka, and only used 1000g of sugar. It tasted really nice and went down really well with the family. We found bargin wine bottles from Wilkinson online;6 clear bottles for under £5.
