Ingredients

  • 350g plain flour, plus extra for rolling
  • 2 tsp baking powder
  • 2 tsp mixed spice
  • 250g golden caster sugar
  • 3 eggs, beaten
  • coarsely grated zest 1 orange
  • 85g raisins
  • 85g dried cherries
  • 50g blanched almonds
  • 50g shelled pistachios

Method

  1. Heat oven to 180C/fan 160C/gas 4. Line 2 baking sheets with baking paper. Put the flour, baking powder, spice and sugar in a large bowl, then mix well. Stir in the eggs and zest until the mixture starts forming clumps, then bring the dough together with your hands – it will seem dry at first but keep kneading until no floury patches remain. Add the fruit and nuts, then work them in until evenly distributed.
  2. Turn the dough out onto a lightly floured surface and divide into 4 pieces. With lightly floured hands, roll each piece into a sausage about 30cm long. Place 2 on each tray, well spaced apart. Bake for 25-30 mins until the dough has risen and spread and feels firm. It should still look pale. Remove from the oven, transfer to a wire rack for a few mins until cool enough to handle, then turn down the oven to 140C/fan 120C/gas 1.
  3. Using a bread knife, cut into slices about 1cm thick on the diagonal, then lay the slices flat on the baking sheets. The biscuits can be cooled and frozen flat on the sheet at this point, then bagged and frozen for up to 2 months. Bake for another 15 mins (20 mins if from frozen), turn over, then bake again for another 15 mins until dry and golden. Tip onto a wire rack to cool completely, then store in an airtight tin for up to one month, or pack into boxes or cellophane bags if giving as gifts straightaway.

I have made these for Christmas hamper for family. I am very impressed how they turned out, even my husband likes the fruit ones and he hates dried fruit. Just a tad sweet - I will add less next time, I had large eggs as well but only added some of the three egg mixture until I got the right texture - turned out well . large eggs would be too much I think. I added cranberries, raisins, chopped walnuts, chopped almonds in one half and choc chips, cranberries and walnuts in the other - all taste great. Great recipe - thanks.

These are the best biscotti I've ever tasted and I can't believe how easy they are to make! I used dried cranberries instead of cherries and they were delicious, and they made a lovely festive gift in a jar with a nice ribbon on it.

Just finishing these off in the oven now, the smell of christmas is slowly drifting up the stairs :) I've frozen 3/4 which will be given as presents and cooking the rest. The dough was a bit fiddly and it was a bit awkward getting the fruit in, I added juice from half the orange to make the dough a bit more pliable and a little more flour which worked fine. I'm looking forward to giving them out as christmas presents :)

Made this recipe twice now and although it can be a bit fiddly it is so worth it. I added a couple of drops of almond essence and a handful of dried cranberries, both of which added to the deliciousness. This is now a favourite of mine to make for presents- my Mum refuses to buy biscotti anymore as she says theres no comparison :) biscuitsandblackites.blogspot.com

I found this recipe needed a lot more flour than recommended as the dough was very wet & sticky - keep more available close to hand.

I made these for Christmas gifts and have been asked for repeat presents! I have made them several times since. I followed the recipe exactly and this gave me a decent looking biscotti which tasted really fruity. They are perfect served with strong coffee to dip them into or just as they are. I gave these biscuits in little gifts boxes with tissue paper surrounding them to make sure they didn't break up. Made these last night - very easy and delicious! Pretty and festive. Did not have raisins but added more cherries (which our family prefer anyway). Great recipe to do with kids as my 5 year old was very happy to get her hands mucky kneading the dough. Have put into pretty tins for gifts. A keeper!

Taste fantastic - Excellent recipe for a beginner as I hadn't made these before. Didn't make as many as it said though - It only made 48 (maybe I cut them bigger but did as recipe said). Used mixed fruits instead of raisins and clementine rind instead of orange but only because this is what I had in already!

These are really enjoyable to make and so so tasty dipped in coffee..especially a festive brandy coffee! Made these a few days before Christmas with cranberries instead of cherries & flaked almonds. Giving the rest away as a gift but planning on making another batch with chunkier almonds today!

This is such a great recipe...you can swop the fruit and nuts for any type. I make these and sell them to my local cinema - they have a really long shelf life and look great too!

I made these to send as Christmas gifts - very easy and satisfying to make and produced a lovely Christmassy smell from the oven! I didn't turn the biscotti over in the second round of cooking - I baked for 20 mins on just one side and found this to be sufficient. I also substituted the cherries and almonds/pistachios for dried cranberries and macadamia nuts instead. Tip: I found that buying a mixed snack pack of cranberries/macadamia (in Sainsburys) was significantly cheaper than buying the individual ingredients in the home baking section.

I attempted to make my own mixed spice with cinnamon, nutmeg, ground ginger and all spice- dont do it! the mix taste horrific!

Lovely! I've just baked 1/3 of the recipe as a test and it worked pretty well! I'll bake more next week for my xmas presents. I also changed the cherries for dry cranberries and broke a little bit the pistchaios and almonds.
