A sticky, moist fruit cake miraculously made without butter, eggs or added sugar. This is the ultimate guilt-free sweet treat

  • 250g stoned dates, roughly chopped
  • 300ml water
  • 85g plain flour
  • 85g wholemeal plain flour
  • 3 tsp baking powder
  • 2 tsp mixed spice
  • 1 tsp cinnamon
  • 500g mixed dried fruit
  • 80 ml orange juice
  • (Optional iced fruit topping)
  • 50g sifted icing sugar
  • 1/2 tbsp apricot jam
  • 1/2 tbsp water
  • 3 chopped dried apricots
  • 4 chopped glacier cherries


    1. Preheat the oven to 180C/160C fan/gas 4. Place the dates in a saucepan, and add the water. Bring the mixture to the boil, reduce the heat and simmer for 5 minutes. Turn off the heat and set aside.
    2. Sieve the plain flour, wholemeal flour and baking powder into a large mixing bowl. Add the mixed spice and cinnamon.
    3. Pour the wet date mixture into the dry mix, then add the dried fruit and the orange juice. Stir gently with a wooden spoon until well combined.
    4. Spoon the mixture into a greasproof paper-lined loaf tin, or divide it between 6 smaller tins. Bake for 40-45 minutes if making one large loaf, or 30 minutes for the mini mollies. A skewer stuck in the centre of the cake should come out clean.
    5. Leave the cake to cool on a wire rack for at least an hour. To make the iced topping (if using), melt the jam and water together in the microwave. Add wet mixture to the icing sugar, and stir well. Drizzle over the cake, and sprinkle the chopped apricots and cherries on the top. Alternatively, decorate with ready to roll icing, cut into shapes.

But apricot jam is full of sugar and the cherries are too? is there an alternative as partner is diabetic?

Hi I'd like to give this recipe out in my diet class but would need to know how many calories it has in a slice if it slices into 12. Can you help?

Is it crucial for the dates to be heated? I've just put all the dried fruit to soak in tea for a few hours. But I stupidly forgot to keep the dates separate, so now everything is mixed up...

What a fabulous cake, and just the right sweetness. It turns out beautifully moist everytime. It is a fun recipe to experiment with different types and sample sizes of died fruit. My favourite is added prunes and cranberries :)
I would also agree that soaking the fruits in tea over night works wonders for the end result of the cake. This is definitely a recipe that shall make a regular appearance in my Kitchen (but will disappear in an instant once it is out of the oven!)

Glad you like it Elliemae! Well it's not *really* low in calories because of the high dried fruit content...BUT it's certainly not bad for you, which is quite unusual for a cake!

You're right, it definitely doesn't need the topping - it's plenty sweet enough already. I just added it to make the loaf look a little more appealing.

If you want to lower the calories, take away 100g or so of the dried fruit and add one peeled, cubed apple instead.

And one more tip - if you soak the dried fruit in tea overnight, the fruit will go nice 'n plump. Just remember to sieve it before using.

I just made it as it is but without the topping, it didn't need it. My friend loves to spread butter on it like a malt loaf, but REALY it doesn't need anything.

I love this recipe, I'm sure its not low in calories, any ideas?? Low fat - thats got to be good for something, no ADDED sugar... it is so easy to make and a winner with the family.
