Self-saucing Jaffa pudding

This intense chocolate orange sponge bake with thick sauce is about as indulgent as a good pudding gets

Method

  1. Butter a 2-litre baking dish and heat oven to 180C/160C fan/gas 4. Put the kettle on. Put the flour, caster sugar, 50g cocoa, baking powder, orange zest and a pinch of salt in a large mixing bowl. Whisk together the orange juice and any pulp left in the juicer, the eggs, melted butter and milk, then pour onto the dry ingredients and mix together until smooth. Stir in the chocolate chunks and scrape everything into the baking dish.
  2. Mix 300ml boiling water from the kettle with the sugar and cocoa for the sauce, then pour this all over the pudding batter - don't worry, it will look very strange at this stage! Bake on the middle shelf of the oven for 30 mins until the surface looks firm, risen and crisp. As you scoop spoonfuls into serving bowls, you should find a glossy, rich chocolate sauce underneath the sponge. Eat immediately with vanilla ice cream or single cream.

IF YOU WANT TO USE A SLOW COOKER...

Remove and butter your slow cooker pot. Put flour, caster sugar, cocoa, baking powder, orange zest and a pinch of salt in a mixing bowl. Whisk orange juice, eggs, melted butter and milk, then pour on the dry ingredients and mix until smooth. Stir in the chocolate chunks and scrape it all into the pot. Mix ½ pint boiling water with sugar and cocoa then pour this over the batter. Return the pot to the slow cooker base, cover and cook on High for 3 hours until firm and risen.

    WOW, this recipe is great. Will definitely use again, ideal pud for visitors. Very rich, best eaten after a light meal. No good for dieters, My Husband kept going back to the dish throughout the evening!! Mine needed another 5 mins in the oven as it was still quite wobbly. At first I thought this was due to the sauce underneath as the top was crunchy but when I put a spoon into the centre there was still some raw cake mix. I also made stage 1 about 3 hours ahead and left it on the worktop, pouring the sauce on just as I was ready to bake it.

    Wow! Am a total beginner at baking anything and this was surprisingly GOOD even at my baking level! Took me slightly longer than 35 min given it was my first time, but i'm sure it definitely will take shorter and taste better the next time i'm making it! All my friends were full of praises for such a "magical" pudding - everyone thought the sauce was an add-on and they were surprised to find it was self-saucing! Cool! :)

    Very gorgeous. I made it with dark chocolate (Green and Blacks Maya Gold) and it tastes amazing with vanilla ice-cream. My kids love it. It also reheats well - just place a portion in a bowl and microwave for 45 seconds (don't know why other reviews say it doesn't reheat??)

    What can I say absolutely fantastic. The whole family loved it and all wanted seconds. I was a bit surprised at how big it was when it came out of the oven and thought how are we going to get through this, family of 6 but I needn't have worried as it was soon all gone. I will definetly be making this again.

    My boyfriend described this as the best pud I have ever made! I halved the ingredients but used the same amount of orange juice and zest. I thought it was a disaster before I put it in the oven - the sauce sunk into the batter (which i thought was too runny!) but it all came out perfectly!! So pleased at how it came out, crunchy top and gooey in the middle. It reheats really well too! Definitely going to make this again!

    Yes, it is easy and delicious. My boys were less keen on the orange flavour, so I'll make with normal milk choc next time. I used Terry's Choc Orange, so maybe it wasn't posh enough? The recipe makes a large amount! Yummy.
