Method

  1. Crush the biscuits with a rolling pin, mix in the sugar.
  2. Crush the biscuits with a rolling pin, mix in the sugar.
  3. Press the base into suitable base â€Â" I normally just put the outside of a cake tin straight on a plate.
  4. Make the dream topping by whisking it up with milk as per packet.
  5. Sieve icing sugar and whip with cream cheese. Whisk with dream topping mixture. It should be fairly thick.
  6. Pour topping onto base, chill for a few hours/overnight then arrange fruit on top and serve.

    Had some friends round and served this for sweet course -it was delicious and they loved it and asked me for the recipe as they were entertaining shortly. My 11 year old Grandson thought it was yummy! It really is the best cheesecake I've ever tasted and so easy to make. Making it again tomorrow for other friends.

Ingredients

  • BASE
  • 200g digestive biscuits
  • 100g butter or marge
  • 2/3 tablespoons soft brown sugar
  • TOPPING
  • 3 packs elmlea dream topping (make acc. to pack instructions by whisking with 450ml milk)
  • 200g philadelphia cream cheese
  • 150g icing sugar
  • Fruit (strawberries, kiwi, canned cherries are good)
