Homemade tomato sauce

A handy standby which goes with just about everything, and keeps for 3 months in the fridge

Method

  1. Heat the oil in a large, deep pan, then fry the onions, ginger, garlic and chilli for 10-15 mins until soft. Add the remaining ingredients and some seasoning, then boil for 30 mins, stirring occasionally, until the mixture has thickened and is sticky.
  2. Cool slightly, then whizz in a blender or food processor until smooth. If the sauce is a bit thick for your liking, stir in a dribble of boiling water. Sieve, then funnel into a bottle or jar while still hot. Cool completely before serving. Will keep for 3 months in the fridge.

    I was a little disappointed with this recipe, tastes too sweet and the consistency is very similar to soup. I did water it down slightly but was afraid of over doing it. If someone gets the sugar measurements correct, please let me know. I wasnt sure how many coriander seeds to put in, so i added a teaspoon.

    I always halve recipes where I can till I've tried them myself. Glad I did this time. Everyone else seems to have added more chilli but even the stated amount was too hot for me and would probably be for small kiddies. Also, how big is a chilli? they vary so much. I'll give it another go with just a 4cm piece to 800g toms

    Tastes very fresh next time i would be temped to deseed & the chop the tomatoes before hand. It was slightly thick at the end so i added a dash more olive oil & a splash of water, the chilli i used was quite fat so should have used half that, Next time i will if a sizable chilli. Overall pretty good i would make some more again, Better than the stuff off the shelf.

    too sweet! however i didnt have the ginger and coriander so dont know if that had an impact or not. next time i will add only half the suger stated. Ended up adding majorum and basil and whatever i could find in cupboard, ended up real nice, i will def make again with less sugar!!

    This tasted nice but was way too sweet. It's more like a sweet tomato chutney. I will make it again but with half the amount of sugar, maybe even less.

    I took on board what was written & used half the amount of sugar, I also used 2 cans of chopped tomatoes not fresh & it was lovely. It says 'lasts 3 months in the fridge', if only, its too good!!

Ingredients

  • 1 tbsp olive oil
  • 2 onions , chopped
  • 1 thumb-size piece fresh root ginger , finely chopped or grated
  • 2 garlic cloves , chopped
  • 1 red chilli , deseeded and finely chopped
  • 800g tomatoes , briefly whizzed in a food processor or finely chopped
  • 100g dark brown sugar
  • 100ml red wine vinegar
  • 2 tbsp tomato purée
  • coriander seeds
