Apple & blackberry crumble

Raymond Blanc pre-cooks the crumble topping to avoid gluey, uncooked crumble and retain the texture of the fruit

Method

  1. Heat oven to 190C/170C fan/gas 5. Tip the flour and sugar into a large bowl. Add the butter, then rub into the flour using your fingertips to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy. Sprinkle the mixture evenly over a baking sheet and bake for 15 mins or until lightly coloured.
  2. Meanwhile, for the compote, peel, core and cut the apples into 2cm dice. Put the butter and sugar in a medium saucepan and melt together over a medium heat. Cook for 3 mins until the mixture turns to a light caramel. Stir in the apples and cook for 3 mins. Add the blackberries and cinnamon, and cook for 3 mins more. Cover, remove from the heat, then leave for 2-3 mins to continue cooking in the warmth of the pan.
  3. To serve, spoon the warm fruit into an ovenproof gratin dish, top with the crumble mix, then reheat in the oven for 5-10 mins. Serve with vanilla ice cream.

    Very nice,quick and easy pudding. Can't rate accurately as could not get blackberries and so used raspberries which was very nice. Looking forward to trying the actual recipe!

    I love this recipe! Made a massive one for a big lunch so just tripled the quantities, and I made it with apples, cinnamon and mincemeat for a festive twist! Absolutely delicious!! Cooking both elements separately is a great idea and everyone raved about it - I usually wouldn't have followed a recipe for such a 'simple' dish however this gave it the edge!

    Very simple recipe to follow, and the resulting pudding was absolutely delicious! As tinamarie said, it's just as good as any crumble you'd get in a good pub or restaurant :-)

    So delicious, and easy too. Added some oats to the topping. Thumbs up from the kids. Next time I'll cook the apples a little longer to soften them before adding the berries, but other than that wouldn't change a thing! An ideal recipe to make into individual ramekins, I can see this becoming a staple in our house

    Fabulous result - did one & a half times the amounts to ensure good sized portions all around. Also substituted ground almonds for a third of the flour - and added a bit more sugar to the fruit to cater for our sweet tooth. finally I took the crumble out at 10 mins & shuffled it around the tray then cooked for another 5. Perfect just as we like it.
