Frosted carrot squares

Method

  1. Line an 18cm square tin with baking parchment. Ask your grown-up helper to turn the oven on to 180C/160C fan/gas 4. Grate the carrots on the fine side of the grater, then tip them into a large bowl.
  2. Sift the sugar, flour, bicarb and cinnamon on top of the carrot, then add the orange zest and mix everything around a bit.
  3. Break the eggs into a bowl (scoop out any bits of shell), then add them to the bowl along with the oil. Mix everything together well.
  4. Scoop the cake mix into your tin and level the top. Ask a grown-up to put it in the oven for 30 minutes or until the cake is cooked. Cool.
  5. To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth.
  6. When the cake is cool, spread the top with the icing and cut into squares. Decorate with sprinkles, if you like.

    Love this recipe! When its time to make carrot cake i always reach for this recipe. Its very moist and easy to make. I exchange the topping for butter icing as i love butter icing!

    very yummy! i halved the cream cheese in the topping and added more icing sugar with vanilla essence and I also added walnut pieces to the mixture. everyone loved it!

    I made this cake today for my mum for her Birthday and OMG, I have never made carrot cake before because i always thought it would be difficult but trust me when i say it was soooo easy, throw it all in one bowl, stir the heck out of it and throw it in a lined tin and cook... what could be easier, I made it using Wheat and Gluten free flower which i had to increase the measurement (of flour only) by half again and it came out perfect, I also used Pink Cake Glitter on the top with Silver candles and looks a dream... I wish we could upload our pictures too, Go Go Go Get cooking this cake :D x

    Love this recipe and have made it many times. It's really simple (perfect for working with kids). I personally find the topping a bit too indulgent so have switched it to simple icing sugar made with orange juice(from the zested ones).
