Roast chicken with vegetables

- 200g chicken, chopped
- 1 red onion, chopped
- 2 sweet pepper, orange and yellow color, chopped
- 1 zucchini, chopped
- 3 sprigs thyme
- 2 sprigs mint
- 5 black olive, half-cut
- black pepper
- 5 tbsp olive oil
- First, cut several kinds of vegetables and lay them on a heat-resistant dish.
- Then sit some small pieces of chicken on top of the vegetables and put some fresh leaves of mint and thyme.
- Sprinkle olive oil, salt, and black pepper on them. By roasting it for 40 mins in 180C, you will find gorgeous Mediterranean-style roast chicken and vegetables.
