One-pot chicken pilaf

Keep the washing-up down to an absolute minimum with this one-pot supper - you can even eat it out of the cooking dish!

Method

  1. Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.
  2. Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

    This was easy and super tasty. I used cauliflower, broccoli, peppers and frozen peas. I did used chicken breast as my boyfriend doesn't like the dark meat, so it was a little dry - thighs would probably be the best. It is as everyone says, a great way to rustle something up from what you have in the cupboard and fridge. Nice and cheap! We had some left for lunch the next day.

    Lovely meal. Only my fussy 7 year son did not like it, the other children loved it. I used long grain rice, loads of stock, carrots, sweetcorn, peppers, red onions, garlic, broccoli and cauliflower. I had no curry paste so used powder, it was very tasty.

    Cooked this last night but misread the recipe and added 3 tbsp of curry paste! My wife and I loved it like that, I will also consider adding more water as mine stuck to the bottom of the pan.

    One word: amazing! We couldn't find any curry paste in Germany, where we live, so used passata and a generous helping of curry powder - plus the stock - and it worked a treat. Mmm. Used frozen veg, and that was fine, but might add some peas next time too. Doubled the quantities for two of us. We're thinking garlic bread on the side for next time, plus maybe a teaspoon or two of cream. Mmmm!

    Excellent mid week meal. Would definitely reccomend it to all. It had great flavour for the amoount of time spent cooking. We used a chicken tikka curry paste and frozen peas. We have enough leftovers for lunch tomorrow which is a bonus.

    Just cooked this for dinner and absolutely love it! However, wasn't too sure about the "mug" measurement so had to estimate and judge it on my own. I'm very pleased it turned out well anyway. Will definitely cook it again!

  • 1 small onion , chopped
  • 1 large or 2 small boneless, skinless chicken thigh fillets, cut into chunks
  • 2 tsp curry paste (choose your favourite)
