One-pot chicken pilaf

Keep the washing-up down to an absolute minimum with this one-pot supper - you can even eat it out of the cooking dish!

Method

  1. Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.
  2. Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

    This was a nice simple dish, I made it for 4 using 4 thighs, 2 large onions etc. Went down will with everyone and makes a good store cupboard meal

    Didn't have any curry paste, so I used curry powder instead. Very delicious and really easy to cook! Will definately be cooking it again, might try different kinds of curry and/or vegetable, just to test the colour and taste.

    Really nice quick dinner. I used fresh veggies rather than frozen and added it a bit later in the meal, also used balti paste. I will definately be cooking again.

    Broccoli and cauliflower don't go well with the curry taste, so if I cook this again I will add only frozen peas to the dish.

    Lovely and really easy. We used frozen french beans and sweet corn as that was all we had in the freezer. Also added a can of chick peas... absolutely lovely. Will be making it every week!

    I'm a fairly hopeless cook but managed to cook this no problem and had a very tasty meal at the end of it. I was very pleased with this receipe, even my boyfriend liked it, who normally complains about my cooking! Will definitely be making again and I like 'tako's suggestion of using up veg from the fridge.

    made this for 2 adults and 3 kids age 12, 11 and 6 by trebling all ingredients. All my kids can be fussy eaters, but this went down really well and everyone had 2nd helpings. Will definitely make again

    I used this recipe as a base recipe for my husband and my mum to try (I don't eat meat). They absolutely loved it. I used madras curry paste and added broccoli and cauliflower. I'd had a couple of glasses of wine before I started cooking so can't remember the quantities of anything I used but I'm going to attempt to do it again tonight. My mum and husband are really looking forward to it!
