Better-than-baked beans with spicy wedges

Students' cuisine may be the butt of many a joke, but with these nutrient-packed, low-fat and cheap beans, they get the last laugh

Method

  1. Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.
  2. Meanwhile, heat the oil in a non-stick pan, then gently fry the onion and bacon together for 5-10 mins until the onions are softened and just starting to turn golden. Stir in the sugar, tomatoes, stock and seasoning to taste, then simmer the sauce for 5 mins. Add the beans, then simmer for another 5 mins until the sauce has thickened. Serve with the wedges.

IF YOU WANT TO USE A SLOW COOKER

Firstly, fry the onions and bacon in a non-stick pan for 5-10 mins then throw in your tomatoes, stock and some seasoning to taste. Place everything in your slow cooker pot and stir in the beans. Cover with the lid and cook on Low overnight or for up to 9-10 hours. If you like, serve with the wedges above.

    Great recipe. Made these tonight for the first time, having read all the positive comments. And yes, they are truly better than regular baked beans. As per some of the comments, I added a carton of passata (200ml) and used chicken stock. I also added a dash of worcestershire sauce. Definitely doing these again, but will make more next time, so that I have some for lunch the next day.

    Just made this...absolutely brilliant. I drained the beans before adding (it doesn't say to in the recipe) as I thought the sauce would be very thin otherwise. I think next time I'll try adding some celery and diced carrot to add to the veg content. A very scrummy quick weeknight meal!

    just made the beans, went down really well with the hubby, served with a few chunky home made chips and nice easy tea. Also used beef stock instead of chicken, might try chicken next time? beef was lovely though. I also left it to simmer longer than required, made the beans softer and the sauce nice and thick, delicious!

    Made this tonight. Impressed with the wedges as they were so easy and very tasty. Used Cayenne pepper Used an extra rasher of bacon, tinned butter beans and half tsp of chilli powder to beans and although I had reserves when I was dishing it up it was really good. Definately a make again and next time I will take the time to use beans that have soaked overnight taking the overall cost down even less. Every penny counts as they say...

    due to some of the comments about it being more a snack than dinner I added few cut up hot dogs\frankfurters in the beginning stage and is was a very filling dinner for me, my partner and daughter. It was very tasty will definitely make again

    Excellent I used dried canellini beans (soaked overnight) - I added Worcester Sauce about 1tbsp and a splash of balsamic vinegar. Very nice indeed - didn't even need to go shopping for ingredients. My Australian husband was not impressed he called it 'war food' although he doesn't like the tinned variety either ! Will definitely make again

    Perfect comfort food on a rainy Melbourne night. I played around with the beans by doubling the bacon, onion and beans but using only one can of chopped tomatoes, the 200 ml of stock and about 3 tablespoons of tomato paste, which made the sauce nice and rich without being too runny. There's enough of the beans left for brekfast tomorrow, will probably reheat them in the oven with a couple of eggs cracked over them.

    Ok so is the fact i used a can of chopped tomatoes why mine was sooo runny! Ended up using more stock minus the liquid but still didnt thicken very well!? Ewas tasty but could have been tastier X

  • 1 tsp sugar , brown if you have it

  • 0.5 tsp cayenne pepper , paprika or mild chilli powder
