Better-than-baked beans with spicy wedges

Students' cuisine may be the butt of many a joke, but with these nutrient-packed, low-fat and cheap beans, they get the last laugh

Method

  1. Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.
  2. Meanwhile, heat the oil in a non-stick pan, then gently fry the onion and bacon together for 5-10 mins until the onions are softened and just starting to turn golden. Stir in the sugar, tomatoes, stock and seasoning to taste, then simmer the sauce for 5 mins. Add the beans, then simmer for another 5 mins until the sauce has thickened. Serve with the wedges.

IF YOU WANT TO USE A SLOW COOKER

Firstly, fry the onions and bacon in a non-stick pan for 5-10 mins then throw in your tomatoes, stock and some seasoning to taste. Place everything in your slow cooker pot and stir in the beans. Cover with the lid and cook on Low overnight or for up to 9-10 hours. If you like, serve with the wedges above.

    Crumpets or toast? WHAT?!! Odd side suggestions aside, this meal definitely needs some meat with it, the wedges were nice but in my opinion just not enough to fill you up. 3/5

    Delicious! I used passata instead of tinned tomatoes to make it more saucy and it was fantastic. Really yummy.

    My kids are yeast intolerant so tinned baked beans are out for them. I have been searching for a recipe for a long time that could rival tinned beans for small children. This is the best. If you puree it before the beans go in and use petit haricot or navy beans, it is as close as you can get to the "real thing" according to my little ones. It is also Gluten Free, Dairy Free, Egg Free, and Yeast Free if using homemade stock. I always have a batch of the sauce in the freezer and just add beans when needed.

    Tried this for lunch yesturday and I was really surprised how tasty it was. The children asked for seconds so thumbs up. I used dried beans so had to pre-soak them over night but at 42p for 500g (almost doubles when soaked in water)this turned out to be a mega cheap meal. I added a bit more bacon but I will happily make this again without. Will try freezing the sauce next time so I'm prepared quick last minute meals.

    Very tasty, quick and easy to make for lunch, added some cayenne pepper and used veggie pretend bacon. Didn't do the wedges just had the beans with toast instead - traditional way to eat baked beans - not odd at all!

    These were delicious and even my dad (who is an incredibly fussy meat and two veg kind of person) agreed! The wedges are a firm favourite in our house now. We like to use Discovery brand fajita mix as the spice.

    Great recipe. Really easy and the beans were very tasty. Only problem was that the half a teaspoon of cayenne pepper made the wedges way too hot! Even my husband, who loves spicy food, said his mouth was burning a little too much! Suggesting that cayenne, chilli powder and paprika are interchangeable is a bit misleading as they aren't of equal heat. I will definitely make this again, but be a bit more cautious with the spices!!

    I did this simple, healthy and inexpensive dish yesterday and my flatmates and I found this recipe a good alternative to canned baked beans in tomatoe sauce. We liked especially the wedges, but I used more bacon than suggested. All in all the taste was not extraordinary, next time I will use the canned beans again, but adding the wedges.

    really enjoyed this, loved the spicy wedges although mine were a little too hot. Felt the beans needs jazzing up a bit so i added a drizzle of balsamic vinager (i love the stuff) i also added a clove of garlic. I also feel it is 10 times better when left in the fridge and heated up the next day.

    Not so keen on the wedges - prefer the 'Cook Yourself Thin' version of potatoes, egg white and chilli. However, the beans were absolutely gorgeous! It's quite unbelievable how something so simple can taste so good! A definite winner!
