Method

  1. Heat the oil in a large saucepan, then fry the onion for 5 mins until softened. Add the potatoes and stock, then bring to the boil. Cover and simmer for 10-15 mins until tender, adding the peas 2 mins before the end of the cooking time.

  2. Use a slotted spoon to remove a quarter of the vegetables from the pan and set aside. Blend the remaining vegetables and stock in a food processor or using a hand blender until smooth, then stir through the reserved veg, chopped mint and some seasoning. Serve with bread on the side.

This was very quick and easy to make, and tastes really nice. I added several chopped spring onions and a few sliced cloves of garlic to the onion base, then also fried the potatoes for a couple of minutes before adding the stock. Put loads of mint in, from the garden. Really nice, summery flavours and very cheap to make! Would be nice with some creme fraiche plopped on top, but is perfectly creamy without!

Even after reading the other comments, I still didn't use enough mint and had to add mint sauce after I'd blitzed (all of) it. I also used a clove of garlic and found it needed quite a bit of salt and pepper. My preference was to make it totally smooth by putting it through a sieve, as I didn't like the bits of pea shells!

Made this tonight but didn't have any mint, fresh or dried, so I put in half a teaspoon of mint sauce along with the peas. Was worried that it wasn't all the right colour at first but it came out lovely and green once I blitzed it at the end. Added 1 garlic clove along with the onion and a pinch of salt and pepper at the end and it was delicious. Will make again.

Delicious! Used (quite alot of) dried mint, added lemon juice, a dash of balsamic vinegar and leeks. Recommended!

Worked out brilliant and has now become one of my staple soup recipes. I have also made it without the mint for a simple pea and potato soup and it was still fantastic!!

One of my favourite soups (have had this recipe for a few years now)! It's super easy to make and tastes lovely. Makes for a great leftover lunch as well! Try making it with or without peeling the potatoes for different taste/texture (and time spent in the kitchen...). I'd recommend adding a bit more mint to really get a minty kick. Only problem is I once spilled this soup all over the office floor at work, and the office smelt of mint for DAYS...

I used shallots for this because that's what I had in the cupboard! Added a bit of garlic (probably too much!) and it tastes great!! Would recommend you try this quick and simple soup recipe.

Nice, but not outstanding. Needed more stock than stated. Like the suggestion of adding lemon juice, cooking with leeks and adding a dollop of creme fraiche - would have given it more of a kick.

This went down really, really well at work. My boss, unfortunately forgot to get me fresh mint for this recipe, so I added rosemary instead after blitzing the soup and adding remaining veg. I was just as nice, though I can't wait to see what it's like with the mint.

Not a favourite in this house - I'll be throwing most of it away. It's edible, but I'm the only one who thinks so. Don't do what I do and blend the whole mixture, as the texture was gluey. I used fresh mint and thought it was a bit over-powering. Very disappointed overall...
