Superhealthy salmon burgers

If you're after something a bit lighter than potato-packed fishcakes, try these simple oriental-style burgers

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Tip

Oily fish makes a heart-healthy alternative to red meat burgers. This recipe would also be delicious with tuna steaks.

Thai salmon skewers

Mix the curry paste, ginger, soy and oil with 1 tsp honey and seasoning. Marinate the salmon chunks in the curry mixture for 10 mins. Cut 1 red pepper and 1 courgette into chunks, then thread onto skewers with the salmon. Griddle for 8 mins, turning, until the salmon is cooked through.

    I made these last night (but with ground ginger and and green curry paste as that's all that was in the cupboard)... and they were wonderful! I think they would be really nice if you made them into much smaller 'meatballs' and served with noodles as a miso soup!

    These are yum!!! I was a bit dubious when I got the mixture out of the food processor as didn't think it would form into fishcakes I was not disappointed and they were fine. Had them which thai rice, stir fried veg and thai chilli dipping sauce. Fab!

    Delicious, hubby loved them too. Made these the night before and dinner was ready in 10 mins the next day, perfect. Was worried they were going to be too hot with the curry paste but they were not hot at all. The mixture was quite runny but did hold together fine in the fan. Will definitely do these again!

    Great recipe. Very simple to prepare (my 4yr old pretty much did him himself) and really tasty. I used green paste as it wasnt so spicy and all the family really enjoyed them.

    Tried this for the first time last night but used tai green chilli paste as my daughter doesn't like it too hot - came out really tasty but nowhere near hot enough. Red chilli (and more of it) for me next time. Good recipe though.

    These are fantastic! We love them in our house and everyone I serve them too loves them as well. To make it a little cheaper I use smoked salmon (budget stuff or trimmings), about 400 grams and to bulk it out I add a good shake of rice crumbs (for gluten free) or breadcrumbs (straight from a box). They still taste delish and are now a little kinder on your pocket :-)

    Prepared this for dinner tonight - my first recipe from Good Food!! Absolutely gorgeous although I went a bit light on the thai paste as the boys don't like their food too spicy - could have gone the full two spoons as they loved it. Prepared a bit extra ribbon salad - never known my hubby ask for extra helpings of salad. Trouble is - need to find something as good for tomorrow - here goes

    Loved these- they fry up really easily, in fact I used cooking spray instead of vegetable oil. Next time I'm going to add some sweet chilli sauce to the mixture just to sweeten it a little.

  • 4 boneless, skinless salmon fillets , about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger , grated
  • 1 tsp soy sauce
  • 1 bunch coriander , half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

FOR THE SALAD

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar
