Superhealthy salmon burgers

If you're after something a bit lighter than potato-packed fishcakes, try these simple oriental-style burgers

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Tip

Oily fish makes a heart-healthy alternative to red meat burgers. This recipe would also be delicious with tuna steaks.

Thai salmon skewers

Mix the curry paste, ginger, soy and oil with 1 tsp honey and seasoning. Marinate the salmon chunks in the curry mixture for 10 mins. Cut 1 red pepper and 1 courgette into chunks, then thread onto skewers with the salmon. Griddle for 8 mins, turning, until the salmon is cooked through.

    I used Harissa paste which worked really well. I didnt have any curry paste and didn't want to buy a whole tin. Any curry style paste works. To make a simple paste which works nicely mix tomato purée/sauce with indian spices, chilli, salt, pepper and herbs. Hope this helps!

    These were amazingly easy to make and they fried well , keeping their shape. So quick and tasty, will def make again, we had them with chips though so not so healthy:-)

    Did not like these at all. Salmon taste was totally overpowered by taste of curry and ginger. Far too oily also. Will not be giving this recipe a second chance.

    Made these last night for the first time and they were fantastic. The salmon remained beautifully soft and the flavours were lovely. We added lime juice over the top when serving. To accompany we made the BBCs 'Mango, rocket and red onion salad' but substituted the mint for coriander. Great combination. Will definitely be making again!

    Oh my, this was lovely! And so easy. Served it with leaves and Thai-spiced potato salad. Be careful not to overcook the salmon, I reckon 1-2 minutes per side, max.

    Tasty stuff. Served with the salad and it went down a treat. Accidentally added double the amount soy sauce but it didn't seem to matter. Looking forward to having these again.

    Yum .. stuck to the recipe and these were delicious with Salmon, can't wait to try them with Tuna as well. My hubby and I were so impressed with these we've said that we'd have them on a regular basis. The little salad is also lovely, but rather than rice I did some egg noodles in a sweet chilli sauce (which was a bit naughty but went REALLY well with it all!!).

    Myself and my hubby decided we wanted to start a healthier approach to eating and this was the first meal I prepared after our 'Healthy shopping trip' to the supermarket, we absolutely loved them, we did our own salad mixed with spring onions, peppers and cherry tomatoes also drizzled some balsamic vinegar over it instead of my usual Mayo!!!! Scrummy!!!!

    One of the most amazing dishes I have ever prepared. Also highly recommendable when starting of a relaxing evening à deux. Goes beautifully with Sauvignon Blanc. I usually leave out the rice and serve thin and crispy burgers on the salad and decorate with a little crema di balsamico and some left over unpicked coriander. Impresses, is healthy and tastes fabulous. My wife asks me to make this at least once a week!! :)

  • 4 boneless, skinless salmon fillets , about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger , grated
  • 1 tsp soy sauce
  • 1 bunch coriander , half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

FOR THE SALAD

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar
