Superhealthy salmon burgers

If you're after something a bit lighter than potato-packed fishcakes, try these simple oriental-style burgers

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Tip

Oily fish makes a heart-healthy alternative to red meat burgers. This recipe would also be delicious with tuna steaks.

Thai salmon skewers

Mix the curry paste, ginger, soy and oil with 1 tsp honey and seasoning. Marinate the salmon chunks in the curry mixture for 10 mins. Cut 1 red pepper and 1 courgette into chunks, then thread onto skewers with the salmon. Griddle for 8 mins, turning, until the salmon is cooked through.

    these were very easy to make and tasted delicious. I added spring onion as some others have suggested. Have to agree with the comments regarding the consistency of the salmon when it comes out of the blender it does seem very wet. I took the tip of dusting with flour and refrigerated for a few hours prior to cooking. The tip regarding cooking in sesame oil was great and I think really added flavour. I served mine with sweet potato chips. Definitely will be making these again, they were scrummy - being healthy is a bonus!

    My husband doesnt like salmon so substituted this with fresh tuna. A real winner. Also made it with prawn - really tasty but didnt combine as well. A new favorite:)

    I didn't have any curry paste, so made without - just salmon, soya sauce and ginger - and they were fantastic! Also grilled them instead of frying them in oil - so mega healthy! Served them with rice and fresh beetroot salad. Will be definitely making this again...

    OMG, these were Amazing. I cant believe how easy they were to make too. I made them this afternoon and kept them in the fridge to develop the flavours. My husband doesnt like cucumber so I made warm carrot and couregette slices and sauteed them in a little butter. They are so easy to make so could be made in bulk and used for a summer BBQ.

    These were really good. i was worried that when it came to the frying and turning over part they would crumble like some other recipes, but they stayed together brilliantly. husband, not a fish lover, even liked them. we will have them again, not least but i can just throw the ingredients into the food processor and it does all the work!!!

    Interesting idea for a 'healthy' fish cake. Although there is good Omega 3 fatty acids in the salmon, I think it needs a lot more butter or lard to be nourishing.     Loved this recipe! Normally my four year old won't east fish but he wiped his plate clean! Served them with potato wedges and salad for a light dinner -went down well.

    These were fantastic! I had high hopes having read the reviews and I was ultimately satisfied. I scaled it up as I had an extra fillet. Very quick to make, only used a teardrop of oil (wasn't really needed), held together well and plenty of flavour. I added 2 spare spring onions. My joint favourite recipe from this site :)

    These were amazing, the best recipe I have found in a while, I love GF website. Served it for a dinner party starter... and should have made more! Used green paste as I prefer this to red. When asked for the recipe I was quite reluctant to give it, as it is so simple and quick and my cover of being a good cook would be blown!

Ingredients

  • 4 boneless, skinless salmon fillets , about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger , grated
  • 1 tsp soy sauce
  • 1 bunch coriander , half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

FOR THE SALAD

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar
