Superhealthy salmon burgers

If you're after something a bit lighter than potato-packed fishcakes, try these simple oriental-style burgers

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Tip

Oily fish makes a heart-healthy alternative to red meat burgers. This recipe would also be delicious with tuna steaks.

Thai salmon skewers

Mix the curry paste, ginger, soy and oil with 1 tsp honey and seasoning. Marinate the salmon chunks in the curry mixture for 10 mins. Cut 1 red pepper and 1 courgette into chunks, then thread onto skewers with the salmon. Griddle for 8 mins, turning, until the salmon is cooked through.

    Fab recipe - great flavour with ginger and thai paste even for someone who isn't that keen on ginger.... We added a small pot of brown crab meat which worked really well. Definitely do again.

    Quick, easy, and tasty. Used dried coriander and ginger as had no fresh, and mild curry paste as don't like things too hot. Very tasty, although we blended it for too long in the food processor so the texture was a bit too smooth! The salad was simple, quick and yummy too.

    Very nice! I served the fish cakes with potato wedges and the salad. I was a bit dubious about the salad, but as everyone had raved about it, thought I'd give it a go. It's pretty good! Nice fresh flavours and the vinegar isn't at all as overpowering as I'd feared. I'd make these again for sure.

    This recipe was 5 stars for me, the taste was wonderful, served it with a normal salad and some savoury rice. Unfortunately my boyfriend didn't think it was enough of a meal for him so I think I'll only have them in my lunchbox with a salad from now on. Gotta find him a recipe that has some form of potato and bread crumbs!!

    Really easy and very tasty. I'm on a diet and these were low fat and filling. I used a hand blender instead of a food processor and they turned out fine. I also used a non-stick pan with a spray of oil and they went a lovely colour. I served with the ribbon salad - also fantastic and (a diet version of) egg fried rice. Think this will become a favourite

    Loved them! Adding a little red chilli and lime juice gave it quite a kick. Served with pak choi and stir fry vegetables. Yummy!

    Dead easy, very quick and tasty. They held together in the pan no problem and having made them once you can easily see how you could add various other ingredients to suit yourself. Will try grilling / baking next time to see if it works as well. Would go well with noodles and japanese pickles.

    Just made these and they were the first fish cakes that didn't fall apart while cooking and ruin my dinner! Lovely flavour and a perfect way to get someone who doesn't like salmon to eat it (my boyfriend liked them as much as me)! I made them into smaller cakes rather than burgers and served with sweet chilli sauce and spicy vegetable egg fried rice - yum!

    I made this for my family today and we absoultly loved them! I would not change one thing! I would recomend them to any one who likes fish. We made a lovely rice salad to go with it. We could not belive how packed with flavour they are considering they are so easy! Will definitely be having them again SOON!

  • 4 boneless, skinless salmon fillets , about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger , grated
  • 1 tsp soy sauce
  • 1 bunch coriander , half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

FOR THE SALAD

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar
