Superhealthy salmon burgers

If you're after something a bit lighter than potato-packed fishcakes, try these simple oriental-style burgers

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Tip

Oily fish makes a heart-healthy alternative to red meat burgers. This recipe would also be delicious with tuna steaks.

Thai salmon skewers

Mix the curry paste, ginger, soy and oil with 1 tsp honey and seasoning. Marinate the salmon chunks in the curry mixture for 10 mins. Cut 1 red pepper and 1 courgette into chunks, then thread onto skewers with the salmon. Griddle for 8 mins, turning, until the salmon is cooked through.

    These were a really substantial supper and the mixture held together really well when frying - i would make them a little thinner next time to get more of a crunch on the outside. The salad was AMAZING !

    This recipe is a real favourite in our house - I have lost count on how many times I have made it! Very easy to make and is lovely with a sweet chilli dipping sauce. Didn't make the salad, but served with rice, sweetcorn & peas.

    I just cooked the burgers out of this and had them with some couscous and vegetables, the burgers were really delicious. I think I slightly overcooked them - and they weren't done for the full time, but the flavour was really nice and the texture is quite meaty. Big hit with both myself and my husband! I also tried them with some sweet chilli dipping sauce - yum!

    Found these really tasty and easy to make. Served with rice and the salad, which was also delicious and our little ones were trying the cucumber and carrot strips thought the burgers were a bit spicy for them. Next time would make the recipe for us (4 burgers just enough really to feed 2 hungry adults) and reduce the spice for the little ones in a separate batch. Well worth a try. (NB Don't have a food processor but chopped first and then mixed with my handheld blender).

    Not actually tried the salmon burgers but the Thai Salmon Skewers were absolutely delicious. A great way of eating salmon, lovely and moist and the peppers & courgettes stayed in shape and were a perfect complement to the salmon. Highly recommend !

    These are DELICIOUS! I used green thai paste as it was what I had inthe cupboard. The amounts give us 6 salmon burgers & I must admit it serves 2 well or 3 if you serve with rice etc. The salad is lovely too, I also put raw courgette in the salad. The only thing I would say is not to be scared of the mixture whe I first made I thought the mixture was far too wet and would fall apart in the frying pan. It doesnt - it is fine. Also you dont need ANY oil to fry in if you have a good non stick frying pan.

    Loved this recipe and it is sooo easy to make. Will be making again for sure as whole family cleared their plates. Served ours with chunky home made (fat free) oven chips and mushy peas for a kind of twisted/ fusion spin on fish and chips!

    I have made this receipe twice and it is very tasty indeed. Hubby generally scowls at "healthy" options but he is the biggest fan of these. Pan fried them using hot sesame oil brushed over the pan rather than veg. oil. Served with brown rice and a deluxe veggie stir fry from a posh shop. Silence reigned at the table when 2 fussy teenagers tucked in. Would serve to friends as a super supper dish.

  • 4 boneless, skinless salmon fillets , about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger , grated
  • 1 tsp soy sauce
  • 1 bunch coriander , half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

FOR THE SALAD

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar
