Baked apples with prunes, cinnamon & ginger

A simple, classic low-fat pudding to use up seasonal Bramleys

Method

  1. Heat oven to 200C/fan 180C/gas 6. Using a sharp knife, score a line around the equator of each apple. Put them into a baking dish with a small splash of water in the bottom.
  2. In a bowl, combine the ginger, cinnamon, prunes and sugar. Stuff the mixture into the apples so that they are well packed. Top each with a knob of butter and bake for 35-40 mins, or until cooked through. To test, pierce with a sharp knife - it should slide straight through. The apples can be cooked up to a day ahead, then warmed through in the oven or microwave before eating.
  3. Remove from the oven and baste the apples with the liquid left in the dish. Serve hot or warm with the ice cream.

    I am making these for dessert on Xmas Eve... I like to add some vanilla in the stuffing, and drizzle over some Brandy just before serving :-) Yum!

    Made this and the family hated it. They told me the apples were mouldy and I was very upset because I spent a long time preparing them. I also was sad when I saw the recipe had ginger in because my husband has ginger hair and gets real offended at it! I thought it generally didn't taste too bad and was encoraged to see my son pick his nose.. this is generally a good sign and means.. "Well Done Mum .. I loved that dessert but please do not give me mouldy apples again!!"

    Yum, these are good! Used an eating apple rather than a Bramley, and didn't read the recipe properly, so ended up creaming the butter with all the other ingredients, but this worked pretty well, as it made a paste that was easily stuffed into the apples. The house smelt of Christmas as they cooked, and it was all I could do to restrict myself to just one apple.
