Herrings rolled with mustard & pancetta

Securing the fillets with cocktail sticks is a neat way of cooking enough fish for four without it being fiddly

Method

  1. Heat oven to 220C/fan 200C/gas 7. Lay the fillets, skin-side down, brush them with mustard and lay a slice of pancetta on each. Starting from the tail end, roll the fillet up with the pancetta into a spiral, then secure with a toothpick, a bay leaf and a lemon slice. Sit the fillets in a baking tray or ceramic dish.
  2. Drizzle the fillets with olive oil, then roast for 15-20 mins until cooked through and starting to brown at the edges. Serve 2 fillets per person with new potatoes or a crunchy apple and onion salad.

    I loved this as did the family the only problem was it was a bit salty. I think that i put to much mustard on them, but other than that it was great and suggestion of the new potatoes with lemon and chive butter was perfect. Will have it again with less mustard this time.

    i tried this and used mackerel instead of herring and accidently used horseraddish with mustard instead of straight mustard and used streaky bacon instead of panchetta... well atleast i used lemon and bayleaves! but it was still delicious!

    I didn't have any bay leaves but it was still delicious! Living in Sweden for a few weeks so lots of reasonably prices herring! I can this becoming a regular recipe! Thanks
