Oaty raisin cookies

These cookies are amazingly easy to make, and have a crumbly-cakey texture to them. Quick and easy and PERFECT with warm milk, natural yoghurt, or just a tastey and healthy treat. This recipe makes 10-12 (depending on how big you want your cookies!) but the amounts can be easily doubled to make larger amounts for more people. Instead of raisins, try chopped dates, small pieces of ginger, chocolate chips...go crazy!

Method

  1. Heat oven to 180 C / 160 C (fan assisted) / gas 4. Grease a large baking sheet
  2. In a large bowl, mix the margarine/butter and sugar together until soft, then beat in the honey (using an electric whisk makes it quick and easy!)
  3. Add the egg and cinnamon powder and mix well
  4. In another bowl, combine the flour, baking powder, oats and raisins and mix together before adding to the butter mixture.
  5. Drop heaped dessertspoonfuls of the cookie dough onto the baking sheet and bake for 10-12 minutes or until lightly golden
  6. Remove them from the oven, they should be golden but will still seem a tiny bit soft to the touch. Leave them on the tray for a minute (this lets them settle slightly) before transferring them to a cooling tray to completely cool. Store in an air tight container or (if you're anything like me) dive straight in!

    These had a lovely flavour, and were very simple to do. I'd have prefered a slightly more biscuity texture though as I felt that other people may have thought they were a bit stale!

    These are gorgeous! I've just made them and I'm already making a second batch as I know they won't last five minutes as soon as my boyfriend gets home, if they even last that long! The texture is unusual but I love it, I added a bit of nutmeg as well as the cinnamon as I love the flavour. I think this would also be lovely with bits of apple instead of raisins and maybe some ground ginger? Yum! Thanks for putting the recipe on here :) it's a good base recipe that could have a million variations!

    nom's! because you mentioned the cakey texture I substituted the raisons (yucks :( ) for choc chips and put them in fairy cake cases. They turned out really well. Thanks very much!

    This is a very easy recipe to follow, with great results. The cookies were fab and the kids loved them and didn't miss any choc chips.

    I did these with dried prunes, raisins and apricots - yummy. To make the prunes and raisins extra juicy I soaked them in a mix of cold black tea and orange juice for a few hours. Very popular with the rowers!

    This is a lovely recipy :) they are so morish and soft. I used golden syrup instead of honey as i had no honey and they where lovely!

    Really nice, didn't use honey as we didn't have any, but used four teaspoons of golden syrup and they came out lovely and chewy... I'd eaten one within a minute of taking them out of the oven!

    These were thoroughly delicious - a yummy chewy cookie! I made them as per the recipe, but next time I think I'll try using vanilla essence instead of cinnamon and chopped apricots instead of raisins. Chocolate and orange ones could be rather scrumptious too. It's nice to have a basic recipe to work from and experiment with different flavours. Thirty minutes after they were cooked I only have half of the first batch left!!

    Made these and they are yum but only 12.... I doubled it up lol oh and i think I owe Nigella an apology. Blaming her recipes for ages about the timings but these took longer than 12 minutes - think my oven is dodge!

    These were Lush! Ilovethem:') I now make them all the time! But I suggest you take them out about Two minutes early, and then they will be nice a chewy:)
