Moroccan chicken with sweet potato mash

Fragrant, tender chicken and creamy sweet potato mash makes a comforting and low-fat midweek meal

Method

  1. Boil the potatoes in salted water for 15 mins or until tender. Mix the ras el hanout with seasoning, then sprinkle all over the chicken. Heat 1 tbsp oil in large frying pan, then brown the chicken for 3 mins on each side until golden.
  2. Lift the chicken out of the pan. Add the onion and garlic and cook for 5 mins until softened. Add the stock, honey, lemon juice and olives, return the chicken to the pan, then simmer for 10 mins until the sauce is syrupy and the chicken cooked.
  3. Mash the potatoes with 1 tbsp oil and season. Thickly slice each chicken breast and stir the coriander through the sauce. Serve the chicken and sauce over mash.

Lamb with harissa sauce

Make mash as before. Season 4 lamb steaks, brown for 5 mins, then remove and keep warm. Soften the onion and garlic, then add 1 tbsp harissa. Stir in the honey, lemon, olives, 400g can chopped tomatoes and a splash of stock. Simmer until thickened. Slice the lamb and serve over the mash, topped with the sauce.

    Delicious! A great hit with ( fussy!! ) eaters. I lobbed in some soft #1 strength goat's cheese mashed in with the sweet potato. Divine! Takes a bit of the sweetness down a notch as well and the #1 strength doesn't add too much fat or calories to the final total for anyone worried about such things. Yum!

    Really easy to make with great results. Cooked the chicken for much longer than 3mins each side but thats just me, I like to make sure its fully cooked. I added in a good handful of dried apricots chopped up and a good handful of sultanas and cooked these together with the onions, which I cooked for longer so they were lovely and soft. Simmered the whole thing in a sauté pan with the lid on for longer, around 15-20mins, came out beautifully, the sauce had gone syrupy and so sweet with the apricots and honey. The spices from the chicken added to this, lovely flavours. I couldn't get ras-el-hanout so used 1tbsp each of cumin and cinnamon. I served with Moroccan cous cous but that's just my preference. Made lovely leftovers the next day too :)

    I made this meal tonight and was very impressed! I thought it had lovely flavours and the sweet potato really complimented it. The only thing I changed was to replace the olives with chopped dates. I don't like olives and found that the dates added extra sweetness.

    I made this for the first time today and loved the flavours. It's the most delicious meal I've tasted for ages. I didn't use olives as it's not possible to buy them fresh where I'm living right now. Added sweet corn and brocoli side dish which complemented the main course.
