Moroccan chicken with sweet potato mash

Fragrant, tender chicken and creamy sweet potato mash makes a comforting and low-fat midweek meal

Method

  1. Boil the potatoes in salted water for 15 mins or until tender. Mix the ras el hanout with seasoning, then sprinkle all over the chicken. Heat 1 tbsp oil in large frying pan, then brown the chicken for 3 mins on each side until golden.
  2. Lift the chicken out of the pan. Add the onion and garlic and cook for 5 mins until softened. Add the stock, honey, lemon juice and olives, return the chicken to the pan, then simmer for 10 mins until the sauce is syrupy and the chicken cooked.
  3. Mash the potatoes with 1 tbsp oil and season. Thickly slice each chicken breast and stir the coriander through the sauce. Serve the chicken and sauce over mash.

Lamb with harissa sauce

Make mash as before. Season 4 lamb steaks, brown for 5 mins, then remove and keep warm. Soften the onion and garlic, then add 1 tbsp harissa. Stir in the honey, lemon, olives, 400g can chopped tomatoes and a splash of stock. Simmer until thickened. Slice the lamb and serve over the mash, topped with the sauce.

    I used chicken thighs in this recipe and oven cooked as I prefer the taste to chicken breast, maybe that's were I went wrong. I had to add cornflour to thicken the sauce and then all the fat just sat on the top in the sauce jug. The chicken lost most of the 'morrocan' flavouring into the sauce and the sweet potatoe mash wasn't anything special. Will try again with Chicken Breast and see what it is like.

    This recipe was amazing. I'm not sure what I was expecting the ras-el-hanout to taste like, never having even heard of it before. But was pleasantly surprised! Very fragrant but not particularly spicy... Lovely! And this dish is SO easy to make. Had a dinner party last night and everyone absolutely loved it! I made a winter vegetable tagine to go with it... winner!!

    Exellent a real change and very easy to do. I had never used sweet potatoes before so used a half sweet and half ordinary potatoes. They mashed beautifully and were just right for my wife and I. Thank you

    Absolutely delicious and so very easy to make! I made a few slight modifications to the recipe. Since we don't like sweet potatoes, I used regular ones and added some cream, a pinch of black pepper and a little bit of garlic powder to the mash. I also added cardamon, a few cloves and some coriander seeds to the spice mix for the chicken. Magical!

    I really recommend this recipe, despite my initial reservation. The spice mix lends the chicken a subtle, but delicious flavour and the sweet potato is a perfect accompaniment. It's making a reappearance on our weekly menu this week!

    This was fabulous, so quick and easy. I used less honey and no olives, only half the stock and cooked it for longer till the sauce was reduced. Added creme fraiche and Nandos peri peri chip sprinkle to the mash. It was plate lickingly lovely

    I really expected this to not be as nice as it was. It was beautiful and fill of flavours, I did mine without the olives as I didnt fancy them. Next time I may add salad or something with it.

    This is a really nice and quick dish. I found a really nice ras-el-hanout mix with rose petals at Tesco in a little jar and use about half of this for 4 chicken breast pieces. I leave the olives out as my husband doesn't like them but apart from that the sauce is really nice and the chicken comes out really moist every time I made it. Highly recommended!
