Moroccan chicken with sweet potato mash

Fragrant, tender chicken and creamy sweet potato mash makes a comforting and low-fat midweek meal

Method

  1. Boil the potatoes in salted water for 15 mins or until tender. Mix the ras el hanout with seasoning, then sprinkle all over the chicken. Heat 1 tbsp oil in large frying pan, then brown the chicken for 3 mins on each side until golden.
  2. Lift the chicken out of the pan. Add the onion and garlic and cook for 5 mins until softened. Add the stock, honey, lemon juice and olives, return the chicken to the pan, then simmer for 10 mins until the sauce is syrupy and the chicken cooked.
  3. Mash the potatoes with 1 tbsp oil and season. Thickly slice each chicken breast and stir the coriander through the sauce. Serve the chicken and sauce over mash.

Lamb with harissa sauce

Make mash as before. Season 4 lamb steaks, brown for 5 mins, then remove and keep warm. Soften the onion and garlic, then add 1 tbsp harissa. Stir in the honey, lemon, olives, 400g can chopped tomatoes and a splash of stock. Simmer until thickened. Slice the lamb and serve over the mash, topped with the sauce.

    This is a lovely, really tasty and easy meal. I liked it with quite a lot of black pepper in the mash. It's perfect for a lazy Saturday night dinner, we've made it twice already!

    Very nice but as my husband doesn't like sweet potato so much I did half and half sweet and normal potato - was very nice and at least got a few extra vitamins into him that way!

    Made this last night and it was a great success! Really tasty and unusual mid-week dinner - would certainly impress as a last-minute friends for supper dish too. Even my seven-year-old son liked it - will certainly be making this again.

    Me & my OH thought this was lovely although I can see why the sweet potato could be a bit sweet for some. I added some sliced red pepper with the onion to get some extra veg. Will also give it a try with cous cous, yum. It's so quick to make too.

    Made this for supper with friends. The smell from the Ras el Hanout as the chicken was cooking was amazing & filled the house! Delicious flavours, all mingling together beautifully. A winner!

    Very nice and easy recipe! The sweet potato mash was great,I also served (frozen) cooked green peas and so the plate looked beautifull! Next time I will use 1/2 the chicken broth as the sauce was alittle thin.All by all Delisious recipe!

    Loved this recipe - really flavourful, I will definitely make this again! I left out the olives because I'm not too keen on them but otherwise cooked it exactly the way the recipe says. Big thumbs up!
