Ingredients

  • 4 egg whites (duck egg whites are the best)
  • 300g caster sugar
  • pinch of salt
  • 1/2 teaspoon vanilla extract

Method

  • STEP 1
    preheat oven to 140C fan 120C gas mark 1.
  • STEP 2
    Line 2 trays with greaseproof paper.
  • STEP 3
    Put eggs and salt in a bowl and mix until soft white peaks form.
  • STEP 4
    Add sugar tablespoon at a time.
  • STEP 5
    Fold in Vanilla extract
  • STEP 6
    spoon individually on to the trays and cook for 30 minutes.
  • STEP 7
    let cool then enjoy
