Light chicken Caesar

A favourite salad, made healthy and speedy, but still so very tasty

Method

  1. Heat the oven to 200c/fan 180c/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Bake for 10-15 minutes until golden. Mix the crème fraîche, Dijon, Worcestershire sauce, garlic and parmesan with a squeeze of lemon juice and a splash of water. Season.
  2. Toss the lettuce with 1/2 the dressing and divide between 2 plates. Top with chicken, croutons and spring onions. Drizzle over the rest of the dressing. Shave over a little parmesan to finish.

    Tastes like a ceasar salad should, you might want to take half the dressing, thin it down a bit to dress the lettuce, leave the rest thicker to drizzle over the top. Recommernd for a summer lunch.

    Verry nice as a lunch with a nice bowl of tomatosoup! I make this every week for my children. My son loves this!
