Light chicken Caesar
A favourite salad, made healthy and speedy, but still so very tasty

Ready in 20 minutes- Heat the oven to 200c/fan 180c/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Bake for 10-15 minutes until golden. Mix the crème fraîche, Dijon, Worcestershire sauce, garlic and parmesan with a squeeze of lemon juice and a splash of water. Season.
- Toss the lettuce with 1/2 the dressing and divide between 2 plates. Top with chicken, croutons and spring onions. Drizzle over the rest of the dressing. Shave over a little parmesan to finish.

- 2 Little Gem lettuces , leaves separated and torn if large
- 2 spring onions , shredded
