Smoky beef stew

Method

  1. Heat oven to 160C/ 140C fan/gas 3. Mix the beef, onions, tomatoes, spices, vinegar and sugar in a casserole dish. Cover and bake for 2½ hrs. Stir in the beans and bake for 30 mins more (with the lid off if the casserole is a little wet or lid on if good consistency), until the beef is tender.
  2. Cool, then freeze in 6-8 portions in small food bags or plastic containers. Defrost in microwave or overnight in fridge, then heat in the morning and transfer to a thermos container, or heat in the microwave at lunchtime.

3 ways to serve it

1. Wrap in soft tortillas with lettuce and soured cream. 2. Top with crumbled feta or grated cheddar and eat with wholemeal pitta or rice. 3. Add leftover cooked spuds with peas or sweetcorn to make it into a one-pot lunch.

    Have made this twice now and its sure to become a staple favourite over winter. I use with potaoes to pad out for lunches as well as dinners served with feta cheese.

    This was one of the nicest stews I�ve ever made. It was so easy and cheap to make, yet packed with lovely flavours. I served it with creamy mashed potato and some steamed veg. Can�t wait to make again!

    Really tasty and easy to prepare, the meat was so tender. It's nice to have dinner cooking away whilst you're busy doing other things! Didn't put the feta on as we forgot and we felt it was missing an extra oomph, so maybe this will help. Delicious!!

    Perhaps my spicing was a tad generous.... but I didn't think so at the time - but this was SPICY; and I like my chilli. I'd added some flour to try and thicken the sauce and also added a rich beef stock cube to take away the tangy tinned tomato taste that seemed destined to drag on. Then having tasted it a good hour later, in order to cater to my delicate ;-) palette (erhem) IN went a good blob of sour cream to try and even it out. I'd say average because I'm not certain that I did screw up on the spicing and I had to add to and adapt the recipe to make it palatable....

    I never can understand recipes for beef stews etc. that call for tins of tomatoes going in, as they are overpowering and would dominate the finished dish, personally I wouldn`t use them in a straight forward stew or casserole but keep them for chillis and curries.

    Also notice that although the above recipe is called "smoky beef stew" the ingredients ask for sweet paprika, surely it should be smoked paprika? None of the other ingredients will give the dish a smoky flavour.

    We picked this because it sounded easy to make and reasonably healthy. We weren't disappointed. It was remarkably easy and produced a very tasty stew. We found it best eaten with couscous and feta. More veg would have given it 5stars.

    This was very easy but rather unexciting. I used slightly less meat (820g) but we only got 5 portions of this. Served with the lime pickled onions, sour cream and rice.

  • 1kg stewing beef , cut into large chunks
  • 2 onions , chopped
  • 800g (2 cans) chopped tomatoes
  • 2 tsp each sweet paprika , ground cumin and mild chilli powder
  • 2 tbsp red or white wine vinegar
  • 2 tbsp caster sugar
  • 400g can butter beans , rinsed and drained
