Crispy garlic & rosemary slices

These herby Mediterranean-style potatoes taste so good it's hard to believe they're low in fat

Method

  1. Heat grill to medium and simmer the potatoes in salted water for 3 mins. Drain well, tip into a shallow baking tray, then gently toss with the oil, garlic, rosemary and seasoning. Spread out in one layer and grill for 10-15 mins or until crisp and golden.

    I did these in the oven instead of under the grill as already had the oven on and they were very tasty, although might slice them a bit thicker next time as they did break up when I tried to mix them up a bit in the tin. The smell was absolutely fantastic and drove my flatmate slightly mad!

    I had them in the oven for 20 mins, and then turned them over and decided to grill them a little more. They didn't turn crispy though, and I added some salt (I'm a salt addict). Absolutely delicious. We'll see what my boyfriend thinks when he gets home... :)
