Pesto chicken kebabs with roasted veg pasta

You can sneak a few vegetables that might normally be refused into this scrumptious low fat supper

Method

  1. Heat oven to 200C/fan 180C/ gas 6. Put the vegetables into a large roasting tin. Scatter with the thyme and season. Drizzle with 2 tbsp olive oil and roast for 40 mins, turning halfway.
  2. Meanwhile, soak 8 wooden skewers. Put the chicken into a shallow dish, then mix with the lemon juice and pesto.
  3. Thread the chicken and tomatoes onto the skewers, then put onto a roasting tray. Drizzle with the rest of the olive oil and roast for 20 mins, turning once, until the chicken is cooked through. Boil the pasta. Toss half of the roasted vegetables and pasta together, then serve with the pesto chicken kebabs.

    my partner does'nt like penne, he only likes tagliatelle or spaghetti, so I used this instead and when I added the veg to the pasta, I added no fat greek yoghurt loosened with a little olive oil and lemon juice with a clove of crushed garlic mixed in. the pasta pan was left on the heat of the hob after it was turned off. this was enough to heat the yoghurt through Delicious.

    This is delicious and very easy to make. You don't need the kebabs, just put the chunks of marinaded chicken and some cherry tomatoes in the roasting tin.

    Just did the pesto-coated kebabs part and have made them a few times. Brilliant, so easy and simple, and very nice. I alternate chicken pieces with cherry tomatoes and chunks of yellow pepper, and use a good quality fresh pesto.

    Excellent recipe and surprisingly filling. Kids didn't like the lemon juice added to the pesto! I did though :0) Delicious and pasta was lovely and really easy! Great BBQ food :)

    Forgot to buy butternut squash but it wasn't missed. As suggested by Moose I put pieces of chicken breast and cherry tomatoes in the roasting tin with everything else and served with wholewheat penne. Absolutely delicious - week day favourite.

    Made this last night - I marinated the chicken with Pesto and some red chillies for extra spice. I also cooked the chicken with the veg and stirred all this into the cooked pasta. Delicious - and plenty leftover for lunch the next day!

    I made this tonight, very tasty, didn't use skewers, as took advice from above and loved it, also added garlic and mushrooms instead of butternut squash as don't like it. Will deffo make again :)

    Tasted fab and the kids loved it! I did the chicken on skewers, simply because I find food on a stick is much more appealing to 3 and 5 year old than normal food!
