All-in-one-baked mushrooms

Method

  1. Heat oven to 220C/fan 200C/gas 7. Drizzle a little olive oil over the base of a ceramic baking dish, then pop in the mushrooms.
  2. Drizzle with the remaining oil and seasoning. Bake for 15 mins until soft, then remove from the oven.
  3. Tuck the ham slices around the mushrooms to create little pockets. Crack the eggs into the pockets, then return to the oven for 10 mins until the egg white is set and the yolk is still a little runny. Serve scooped straight from the dish. Great with baked beans and chips.

    Had this for brunch - just as satisfying as a cooked breakfast, but with less washing up and less grease. Teamed it with baked beans and buttered crumpets.

    Nice idea, but didn't really work for me. The eggs didn't cook well, so it was a little disappointing. I know this recipe saves washing up, but I will cook things separately next time.

    Was OK, served with potato wedges and baked beans. On the whole though, prefer all cooked separately despite the extra washing up.

    Added some homemade tomato sauce in the bottom of the dish before putting in the mushrooms. Much nicer than a fry up! (no greasy hob, either!)

    So easy in one pan like this. I added half a yellow pepper and half a green pepper, few cherry tomatoes to the mushrooms and sliced red onion. Great idea for brunch
