Method

  1. Preheat the oven to 180C
  2. Melt the butter on a low heat in a saucepan
  3. Turn off the heat and whisk in the eggs and the sugar
  4. Add the mashed banana's and flour and whisk throughly
  5. Pour the mix into a well greased oven proof dish (mine is 28cm square)
  6. Bake in the Oven for 20-25 minutes at 180C

    I used a loaf tin so took about 50 minutes on gas mark 4. Came out perfectly and very tasty. Also very easy and quick to make.

    Forgot to mention that I added a pinch of salt to the cake batter, which made a huge difference.
