Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    Great recipe. Didnt have any walnuts so used almonds instead, just as nice! Really recommend this recipe as its so easy!!

    Fantastic recipe for beginner. Simple and delicious with great result. I cut down a bit of sugar as the banana is sweet enough. (personal choice). Love this recipe. Thanks

    Mine didn't work at all. It turned out like a banana brick. There are better banana cake recipes than this one

    I have found this recipe frustrating. The first time I made it, it rose very high although cracked along the middle. I forgot to remove it from the tin after ten minutes and it sank, or rather collapsed. The next time I made it, I took it out of the tin after 10 mins and it only sank slightly as one would expect any cake to do on cooling. The next time it collapsed again, I have tried twice more the last time was today when I took it out of the tin straight away and it has still sunk. I also reduced the temperature to 150 today as I have read that cracking of cakes followed by sinking can be caused by too high a temperature. It'll taste ok but the texture is too dense once it has sunk and so not suitable to offer to guests. Any suggestions please. Otherwise I'm giving up on it!

    It took a little longer than an hour to cook but so easy! Tastes delicious. I added dried cranberries instead of nuts and tasted scrummy!

    I've just baked this and mine too was slightly gooey and stodgy at the bottom. However the top was lovley and crispy but the rest of the cake ended up in the bin i'm afraid. also took 1hr and 10 mins. I won't be making this again :-(

    Fab recipe. Made this atleast a dozen times if not more! I know the recipe off by heart now! Easy and so tasty! I added walnuts to the last one I made and added a drizzle of honey too. Great for first timers! :)
