Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    I absolutley love this recipe, my husband even things its better than his mums!! Its so easy to make, put all the ingredients in and away you go. I added 60g of raisins as my husband has a nut allergy and it works really well! It went down a treat with a cup of tea and a bit of butter spread on it.

    Wasn't impressed with this recipe. When I looked in the oven the fat content of the cake was bubbling over the top of the cake, resulting in it tasting fried! The cake was dense and heavy. I think it needs either more flour or baking powder to make it rise better. Mary Berry's recipe for cherry and banana cake is so much better.

    Very easy to make, even for a beginner cook like me! Everyone loved it! Thought it tasted better with marg than butter though which surprised me!

    Yummmmm! Baked it in a sponge tin as I'm not an owner of a loaf tin and it came out perfectly - lovely and moist, but not too much so. Topped it with a cream cheese icing, mainly because I had some philadelphia to use up, but I'm glad I did this as it made a very good cake excellent (If only I could think of that well known phrase to descibe this! :))

    My 6 year old daughter and I have just made this and put in the oven, made a dozen buns and a small loaf tin full - added a few sultana's at my daughter's request... hope it turns out well as she's sat in front of the oven watching it bake! :o)

    Just made this for first time. After I'd mixed all the ingredients together with a hand blender it seemed too runny so I added a further two dessert spoons of flour. Our fan oven temp is always too high so I started cooking it on 150c for 40 mins in the middle of the oven. After 20 mins I noticed it was browning too much and was still very wet in the middle on testing with a knife, so turned it down to 80c for last 20 mins. After this it was still quite sticky inside so turned oven off and left it in for a further 20 mins, then took it out to cool. Let you know what its like tomorrow........ Next time I may cook it at 80c for the full hour and see what happens!

    love the simplicity of this recipe. But after reading other comments, i tried hard not to let it turn out stodgy, but sadly, it still did. Bit dissapointed. Still, i had fun making it.

    Well it was stodgy but it will be stodgy being a banana cake you can't really get away from that, that's how they are, very nice it was. Gonna make another one in a bit but think I will do as someone else suggested and make little ones in fairy cake cases as I left the big one too long before it got finished and it went mouldy.

    Well my little cup cakes turned out better than the loaf tin version. I made 31, 12 at a time in the tin at 100c for 15 mins, perfect! Nice and moist not dense and stodgy. Try it. I put about 20g less marg too (used Sainsbury light Olive) and used about half a teaspoon of baking power as well. 5 Stars!

    I bake alot of cakes and this is a great Banana Cake but altered the recipe slightly.....2 eggs only, used butter instead of marg and brown sugar instead of white. Cooking temp 160 oc and only for 45 mins!!

    Made this twice now, stayed really moist and is so easy to make. I just used a hand whisk with the blender attachments and did as someone else suggested(when I found I didn't have a loaf tin) and used sandwich tins....its delicious !!
