Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    Brilliantly simple to make and a good base on which to let your imagination run wild. I simply added well-soaked apricots and it was delicious. I can't understand all the negative feedback at all.

    This cake is a very moist cake, I put light brown sugar instead of castor and as I had no margarine I used Lurpak. Was not as heavy as I thought it would be and nice with a little creme fraiche.

    Delicious and very easy to make. I added chopped walnuts and poppy seeds for a little crunch. Making it again today but will add pumkins and 'neals yard' salad sprinkle for a nutty take and serve it with butter.

    A great simple recipe and quick and easy to make - I chose this as I had bananas that needed using up. I had to cook it for over an hour (at 160c) as it was still a little stodgy all over. It was still stodgy in the middle when I took it out but that is because of the bananas, I find it hard to make a cake with bananas that doesn't come out stodgy. Either way it still tastes good with a nice cuppa. Next time I will consider what 'lovefoodbaby' said and make it in two separate sponge tins (rather than a loaf tin) and add vanilla buttercream to the middle.

    Mmm, well, I am a very experienced cook and I have tried this recipe on several occasions. It turns out heavy and stodgy every time. Is it meant to be like this? Tastes ok though.

    @vocalist1 - Banana cake tends to come out stodgy because of the consistency of the bananas. You could always try using less bananas, but I always find that it tastes better the next day when it has cooled down and it doesn't seem as stodgy.

    guess my comment was to long, but i wanted to share, its bakingly easy, i've made 2 one with a friend and one all by myself, if i can do it you can to and it is so lovely and moist, can you taste the dribble in my comments, get down to it, its inspired me to have a go at my friends long lost peach and blueberry tart, yeah i did it in one day in the same oven, it can't be bad for a begginer who bows down to anyone that can bake! Go on you will love it!!!! when i have worked out how to type in my friends recipe for you expericed great ones, i am sure you will be impressed when i did it in one day in the same oven!!!! Thanks for the confidence Ghis xxxx.

    PS don't forget to invest in a food mixer, cheap will do for starters, "it's a miracle, oh it's a miracle", beats hand beating/mixing when your a busy mum (with 6 kids, Yeah, there great fun to, let them have a go!)

    This is great for using up overripe bananas, and easy to vary it by adding sultanas, or chocolate chips, or walnuts as suggested. Found that the cake tastes even better when rested for a day or two after baking. The recipe makes just right amount for two small loaf tins.

    I was looking for something to use some over ripe bananas instead of thowing them when i found this recipe, it was by far the easiest cake I've ever made! I made it with butter and walnuts I'm not a great lover of cooked banana but even I loved it !

    like most people's cake it turned out heavy and stodgy, what a waste of ingredients and gas to cook it, I am on a tight budget and could have done with out the waste.

    Just tried this recipe and it came out far too stodgy. Also it's very sweet even for someone like me who has a sweet tooth! I think that to get it right you need to cut down on the sugar and the marge and that would make it less heavy and sickly Found this recipe and it has loads of great reviews so check this one out instead http://www.nibblous.com/recipe/825
